Tap flight at the brewery. Light brass pour with a very dense ome-finger head that slowly recedes to a bright white gasket on the inside of the glass. The most noticeable quality of the appearance is the thousands of tiny champagne bubbles that leap from the bottom literally filling the glass with activity. Faint candi sugar in the aroma but surprisingly its a hop-forward fragrance that becomes lemony as it warms. Taste isn’t hoppy at all. A little bland and disjointed, but the predominant flavors are cereal grain, wheat, coriander, and neutral grain alcohol. Moderate mouthfeel. Bitter hop oils remain on the palate. Looks good but leaves a lot to be desired.

UPDATED: JAN 19, 2009 Draft in a goblet at Downers Grove Emmett’s. Nice honey gold color in its goblet: hey, I’m generous to beers that look good. Honey smell, too, with a backing of alcohol. Taste is solidly to style, more honey and candi sugar, a note of yeast, a bit of clove and fruit ester. Some spiciness grows halfway through. Served way too cold for this style.

This bottled brew shared with me by the Owner Timothy Burns poured a medium sized head of foamy fine to medium sized mostly lasting white colored bubbles that left behind a very pretty softly carbonated orange colored transparent body and an excellent lacing. The aroma contained notes of caramel and candied malts. The mouth feel was very tingly crisp and vinous in the aftertaste from start to finish. The flavor contained notes of tingly hops crisp sweet candied malts caramel malts and complex yummy goodness. Thanks Tim its was a treat and a pleasure sharing it with you!

Draught, 3/24/08. Little to no off white head clinging to the edge of the glass. Clear light golden in color with a sweet fruity aroma with a touch of spice. Medium foamy body finishes dry and a bit tart. Very fruity in character but not overly sweet.

Pour is clear deep golden with a thin ring of a white head...strongly sweet aroma that is yeasty and perfumey...notes of alcohol...lots of pear and apple flavors with an alcoholic sweetness...some black pepper....very drying yeasty finish with lots of pepper flavors that mask the alcohol...but it is there and has a numbing finish in the mouth...

Found this at the Dundee location. This is a high alcohol beer but the alcoholic taste is very well hidden and not overpowering. Sweet with a very slight taste of banana at the end along with the moderate spiced flavor. Color of beer was golden. Sweet smelling with slight alcohol scent. Overall a good beer to have as a "desert" beer after a good meal.

pretty good. really reminds me strongly of Piece’s Superfluous Tripel. extremely sweet, super candyish. reasonable spices as mentioned in previous postings. the 9% surprises me, i couldn’t really taste it. even my friend, who swears by miller lite and it alone, said "it tastes okay."

Downers Grove draught. Doesn’t smell overly alcoholic; not strong. Clear, light amber sith some bubbles. Thin, slightly off-white head and no lace. Very sweet and very alcoholic; not very well balanced. I decided to warm it up a bit, but things didn’t really change. Clear allspice notes. This brew is too sweet and cloying.

On tap for my 25th birthday at the paletine location. Clear golden with no head. nose is very yeasty, bannanas ad cream with just a slight bit of alcohol vapors. Taste initially sweet with malts, yeast and alcohol that is fairly nicely hidden in the others. The taste then moves towards yeasts, sugars and more esters and grains. WOW, this stuff is great. I am very impressed.

Nice and steady tripel pour was golden with a big thick head. Smelled of alcohol, spice, and some nice fruits. Not bad.
