COMMERCIAL DESCRIPTION
Seven is our most aromatic beer. The brewery’s saison yeast is fully expressed in the aroma with lots of fruitiness while the hops provide light spice notes. The beer has some heft mid-palette but finishes dry with a lightly lingering bitterness. Seven is satisfying on its own but pairs great with a variety of typically fragrant cuisines such as Thai or Indian.
Malts: organic pale, pilsener, organic munich
Hops: magnum, mt.rainier, hallertauer mittelfrüh, liberty

On Draft at P town brewpub 2009. Aroma: Very aromatic. Lemon, orange rind and floral hops Flavor: Long citrus and lemon finish that has no harsh bitterness. Comments: This was the best of the batch with definite complexity in aroma and flavor. Outstanding on draft. I found it very good from the bottle (about 38-9 points), though not this good.

750 from a recent trade. Cloudy orange color with big white head. Bit of spice and earthy funk. Some light citrus fruit. Good body. Really diverse and expanding flavors. Some sweetness. Pretty entertaining even if it is all ver aggressive.

750 ml bottle poured a clear orange amber with a lasting ivory head. Aromas of straw, yeast, spice, grassiness and light fruitiness. Palate was light bodied and smooth with a dry finish. Flavors of straw, yeast, white pepper and a hint of fruitiness with a smooth dry lingering peppery finish.

On tap at the brewery - Pours light hazy yellow with a white head. The aroma has rich smooth malt, some esters, abbey ale smoothness and a bit of milk caramel. It has a medium / full body that starts smooth and has light crispness at the end. The carbonation has some sharpness, but seems mild with the big body. The flavor has smooth Belgian malt and peppery phenolic spice. The finish shows a good amount of alcohol and a lot of banana.

Draft @ Novare Res Bier Café. Cloudy gold color with lasting foam in a snifter. Aroma is a refreshing citrus hops, yeast and hints of barnyard. Barnyard is very subtle. Aroma and flavor is similar.

Flavor is citrus rind, floral hops and sweet bread caramel, with the yeast giving a medium body. Again the barnyard is very subtle in the flavor as well. Low spice /black pepper element. The carbonation is ample with a drying texture on the tongue. Nice balanced variety of flavors. Really easy drinking, and easy to session this even at 8%.

750ml bottle. Clear, orangey, deep golden colour with huge, foamy, fully lasting, superbly lacing, white head. Fruity peach aroma, hints of apricot, mirabelle, yellow stone fruit in general, cautious strawy, yeasty overtones. Taste is moderately sweet malty, fruity, apricot, peach, mirabelle etc. again, a floral honey touch, cautiously strawy, yeasty overtones; slightly sticky, super-soft palate. Clean, precise, superbly elaborated fruitiness.

Bottled: Hazy golden hue with a big fluffy head, excellent lace. Moderate citrus and resiny hops notes along with a solid grain base. Good spicy yeast tone and mostly dry effervescent carbonation. Hits the spot on the warm but comfortable day.

Opaque-ish dark straw under a thin foamy white head. Estery nose with yeasty dough and peppery funk. The flavor is equally doughy yeasty with lots of bread and blonde chewy malts, a touch of barnyard hay and some pilsner malts. Chewy and yeasty overall but still quite good.

My friend up in Salem has been singing the praises of Upright Brewing’s stuff for more than a few weeks now, crowing and bragging every time she makes a visit to the brewery proper in Portland. And so when the opportunity presented itself, I decided to invest in a line of their bottles that had meandered far enough South for me to get my peasant’s hands on them. The Seven is the second of the three I’ve tried, and the first of their saison or saison-esque brews. It’s pretty to behold, with foam that plateaus up and up, creating a beautiful, marble white smooth geology, and a precariously soft precipice. In spite of a bulwark of bubbles, there is a clear, fruity and ester-laden scent of pears, raspberries, blueberries, champagne, green apples and even a light floral scent - intoxicating, and wonderful! And a sip produces a soft, low, murmuring brew that starts half-inflated and ends a wiser, shriveled and more intense version of its former self. It’s a lighter touch than the nose, with pronounced banana and soft pear notes, with a light butteriness, gentle berry touches, and a nice biscuity yeast. This is a really beautiful beer in all the senses, and really shows off Upright’s prowess with saison - no mean feat, given how little room for error there can be. But they dance on those error margins like Russian ballet dancers, with flair and gusto that belie a wonderful elegance.
