COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Fantome tasting last weekend, served in a Fantome tulip. Pours a dark brown color with a bit of a reddish hue. Short head and a bit of lacing. The nose is a bit of Fantome character with spice and some dark malt. Hints of dark fruit. The flavor is similar with a dark-malt presence. Medium body with moderate carbonation. Pretty good.

Bottle - Pours brown amber with a thin light tan head. Fruity and sweet nose, with the black pepper and coriander--and a juniper note?--lightly spicy and sweet malt. Taste is a lot of the same, with a big dusty yeastiness that is present through the finish. Big sweet malt with a smooth spiciness. Real smooth body, a bit powdery. Really good stuff.

750ml bottle shared by Madvike. Unfiltered orange-brown, thick and glowing. Steady off-white/beige head. Fruity, tangy example of the style. Amber malt, discernable black pepper, and lots of fruity yeast tones. A little mineral action, a solid beer, but I can’t believe Fantome hasn’t suffered some in quality in the last few years. The spices some together well, but this isn’t World Class stuff. A little disappointing, but hides the alcohol well....certainly a unique Saison.

I shared a 2010 bottle with Marcus Siu. A - Dark for a Fantôme, a nice deep red-orange with lots of head. S - This smells like a barn… hay, earth, grass. I get some spice and citrus zest after the first smell. T - It starts a little sweet, but warms to be speecy-spicy… It finishes a bit dty and with a bitter herbal-grassy. Not sure where the 10% is at… very well hidden in this brew somewhere. M - Medium body with a nice amount of carbonation. O - Nice and complex. Fantômes are pricey, but they are always satisfactory when I’m in the mood for one. This is a great brew to share with a friend or two during the holidays. Serving type: bottle

Bottle, pours dark amber, pours a light head, the aroma is a light funk, I think it needs a to be aged for a little while, it was fairly light in flavour, but it was decent, just needs a little more something, a bit nutty, and not much christimas

Bottle. Pours a cloudy reddish-brown with a beige head. Sour aroma with dried fruits, spices and wood. Complex, slightly sour flavor with notes of dried fruit, spices, roasted malts, caramel and wood. Alcohol is well hidden. Dry, sour finish but a little aspirin flavor.

Bottle; Pour is murky dark golden amber with a fantastic fine bubbled khaki head in this glass - the nose is spicy, fruity, chocolate notes, with mild sour notes; The flavor profile is interesting - this one is skirting belgian strong ales and farmhouse notes ; honestly, it leans more towards the strong ale for me, coupled with sour notes, obviously. This one has coriander, dark fruits, chocolate, biscuits, caramel, cream, with a touch of lactic from the sour - finishing with a touch of booze, I suppose. Interesting brew.

Very strange beer. Aroma of hay and spices. Taste is very complex and with some sourness. Finishes very dry for a 10% beer. Interesting one!
