Danish: Brygget af basismalt og under mæskníngen og gæringen tilsat enzymer for at opnå en så høj forgærbarhed som overhovedet muligt. Til både bitter-, smags- og aromahumle er brugt den New Zealandske humlesort ‘Nelson Sauvin’ som er opkaldt efter sine druekarakterer, der bringer minder til den New Zealandske hvidvinsdrue Sauvignon Blanc. Af gær er benyttet både champagnegær og brettanomyces og pga. enzymerne er øllen gæret meget langt ned og dermed er slutresultatet en meget tør øl. Efter endt gæring har øllen ligget 5 måneder på hvidvinsfade fra Østrigske Weingut Kollwentz og opnået yderligere karakter. Til slut er den flasket på 750 ml champagneflasker med et ekstra højt CO2 indhold.

English: Nelson Sauvignon is a New Year beer it is fermented with ale yeast, brettanomyces and enzymes. Then it has been aged three months in Austrian white wine casks. Very dry, very vinous and very delicious.

The beer pours a very hazy, deep amber-chestnut color with a full, off-white, very creamy, fluffy head which is mostly lasting and leaves tight, soapy lace. The nose is like no other I have smelled; very white vinous, typical gooseberry, dry flowers, light resinous pine, bretty funk, some, kiwi, and faint toasted vanilla. The flavor is similar with some buttery oak, faint toasted vanilla notes, similar fruity notes as the nose, dry floral and leaves, light pine, tart brett, and just a bit of funk; the bitterness is more than moderate as well as the acidity. The palate is moderate, less than lively, creamy, and bone dry. The finish is longer than expected, bone dry, slightly bitter, tart acidity, leafy notes, and a bit resinous. Not sure of the price tag, but this beer was miraculous. The fruit notes were completely complementary to the dry brett and hop bitterness. And the palate worked well with the flavor progression. I am not sure how Mikkeller does it with every brew but this one was nearly perfect for this type of beer. Amazing.

[4/27/15] Draught at Mikkeller Bar in Copenhagen. Clear golden. Nice fruity hops aroma with a bit of yeast and a bit of alcohol. Flavor of fruity hops, yeasty spiciness, and a bit of alcohol. Medium-bodied.

Pours hazy orange with a thick white head. Aromas lots of fruit, apricots, mango, citrus, gooseberries, vinous notes, brett and some woody dry notes. Taste is as the nose, lots of fruit, citrus, mango, light hops, dry wood and gooseberries. The brettanomyces are very present. Lovely.

Pours a deep golden color with a big head and good lace.
The aroma is fruity with plenty of lemon and melon, it’s lightly funky & very inviting.

The flavor tickles my fancy just so, a tart citrus akin to meyer lemons & muskmelon along with a mild bitterness, a very pleasant dry character and a light bit of sour fruit. The alcohol is masterfully concealed and th shop character is dominant but perfectly inter-woven.

750ml c&c bottle from SHIG, I think. Poured an orange/amber body under a large fizzy off-white head. Aroma/flavor, funky, rotting fruit, earth, lemongrass, vinous. Flavor also has some cherry, chardonnay and wet wood. Full body from stronger carbonation that is fizzy and a medium mouthfeel with a nice lingering aftertaste.

Intenso aroma, ácido, igual que su sabor. Su maduración en barrica de vino le confiere un sabor ácido único, difícil de conseguir y que salga una buena cerveza.

Först aprikos-/persikodoft, sedan kraftig kattpiss. Tendens till disighet. Vackert bärnstens färgad med dragning mot rött. Smakrik, halm, malt och aning vinjästig smak med saftigt mogen stenfrukt. Fyllig och rund smak med perfekt kolsyra. Vinös ananas i den halvtorra eftersmaken.

Bottle. somewhat of a gusher on opening. Pours clear reddish amber with a large white head that mostly dissipates leaving a lot of residual and good lacing. Aroma is initially quite funky, barnyard and horse blanket. After it breathes out some oaky and vinous notes, some fruitiness, passionfruit almost. Flavor is very light sweet, dry indeed, just a light tartness to go with medium funk, medium bitterness and a ton of vinous and oaky notes. There is a tropical note to it as well, presumably from the Nelson hops, although my bottle, being from 2013, has likely seen most of the specific hop character fade with time. There is a certain heat in the finish due to the 9% ABV.

Not my kind of beer, but a is a must, a candy for a child. Strong peach and grape notes, well balanced, with some grassy notes.
