COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

gripping my throat with the clutch of citrus death, ass completely kicked by the sour acid flavor of this Burr. Wet hay, lemon, sour cherries in the aroma. This flavor has citrus, vinegar, manure in the aftertaste. Carbonation of a sprite - perfect palate pimping.

75cl 2011 bottle split with a friend. The pour’s deep hazy orange with no head. The nose is light floral, plenty of lemon and orange. Some spun sugar, delicate barnyard and yeasty funk. The taste is hoppy bitter lemon rind, aggressive grapefruit citrus, tart fruits and sugar. This is ballasted by a chalky light lactic sourness. Nice depth, bright and sweet. Light and easy to drink. Soft carbonation. Overall, very nice.

Bottled 3/8/11. Vibrant golden pour with a small white head. Aroma is very funky and full of brett - leather, citrus, grapefruit, sweet notes of Turkish delights, pineapple, orange - almost like a tropical fruit bowl. A hint of vanilla and musty oak. A hint of balsamic acetid quality, blending in very nicely. I love the aroma. The taste is tart - brett, lactic acid and oak at the forefront. Fruity wild yeast complexity of grapes, lemon zest and additional notes of barnyard and leather. The balance between sweetness and tartness is sooo good, the palate is dry and fresh. It might be the dry hopping that does it, the tropical fruitiness and pungency that makes this so special. But hot dang, this is good.

750 ml bottle bought @ Bierkompass.de. Pours hazy orange white a frothy offwhite head that is rather quick to dissipate while leaving a small trace on the glass. Smell is fullbodied and sour with lemon juice, wood, gooseberries, red currants, vinegar, hay, leather, dark grapes, horse blanket, silage and hints of white pepper, lemon zest, orange peal and resin. Taste is sour with lots of wood, red currants, gooseberries, lemon zest, orange peal, leather, hay, barnyard, resin, sour cherries, peaches, lemon juice, orange juice and hints of white pepper, dry soil, vinegar and horse blanket. Mouthfeel is dry, tart and medium bodied. Finish is sour and tart with resinous wood, red currants, sour cherries, hay, lemon juice and vinegar.

Pours hazy dark orange color with small head. Aroma of sour fruits, goose berry bush, nettle, apples, rose hip, barnyard notes and some grapes. Flavor of goose berries, grapes, sour fruits, yeast and rowan berries. Very dry, sour and berryish palate with a dry finish. Very nice.

Bottle sample at a tasting at Rotem’s place. Thanks beerandbeyond. Cloudy orange-amber with minimal white film. Delicate cider vinegar and limestone aroma, extremely sour, pickle juice! Medium body, smooth texture, short finish. Weird but strangely fine.

la iris sono gusti acidi e amari che si uniscono in bocca in maniera molto piacevole. l’aspetto invitante e l’odore molto pungente fa di questa una delle migliori firmate cantillon.

Clear, warm golden colour, white diminishing head. Aroma of barn, sweat, hops, dried figs, turkish delight, citrus and fresh quark cheese. Balanced flavour, sour and tart, quite warm, light bitter. Warm, balanced, tart finish.
The hops really give this beer an extra punch, even when it has been in the bottle for as long as this one has. Utterly lovely.

Deep golden pour with frothy white head. Aroma is just hay and funk. Flavor is very tart/acidic a bit are barnyard, and some bread. Medium body with light carbonation.
