Bottle of most recent batch. Pours a nice ruby red color with a pinkish head. Aroma is filled with tart raspberries, with lots of funk. I get nice oak character, some vinegar, almost balsamic vinegar, some barnyard, horse blanket, light cheese aroma, light like cherry notes and quite tart aroma too. Flavor follows the nose with lots of tart raspberries, with vinous notes kind of like a Rose, some oak, vinegar, cherry like notes, and funk of, musty old flavors, barnyard, cheese, horse blanket, with a nice fruit and sourness balance. The body is medium with a dry mouth feel. Overall an amazing Fruit Lambic, the best raspberry Lambic and probably also the best Fruit Lambic I have ever had!

A vigorous pour into my New Belgium goblet produces a one-finger thick, pink tinged head. The beer is a deep, concentrated red color (like a sour pie cherry) that shows a clear, bright red color when held up to the light. The aroma smells strongly of fruit, and almost smells of raspberry jam, or at least concentrated juice with its fruit intensity. Raspberry seeds, candied raspberry pulp, sweet raspberry fruit notes, a touch of a woody edge, some herbal raspberry notes, and underneath this some funky phenolics that lean towards musky and plastic / cleaner like notes, but still, tart, juicy, raspberry notes throughout.

Tart, and fairly dry up front, but still has a pervasive raspberry flavor to it; the beer is almost thick with raspberry flavors up front and in the middle, yet it doesn’t get cloying or overwhelmed by the raspberry notes. The finish has a sort of grassy, definitely funky, phenolic, musky animal like character that lingers on the palate in the long finish. Tart, freshly pressed raspberry juice, even some cherry flavors, with lots of tannic skin notes and even some seed flavors to round things out. The body is fairly light, there is a light effervescence to this beer, but it definitely still has some palate presence; a tannic astringency adds some texture, and there seems to be a fruity / lactic fullness here that keeps this from being overly light. This is definitely quite sour, it isn’t on the level of being “hard”, but it is a bit puckering; the raspberries provide a fair amount of acidity on top of the typical Lambic lactic character.

This has a really juicy raspberry character to it, this is by far the dominant character to this beer, but I also like that there is some funky Lambic notes noticeable underneath this. Raspberries really aren’t my favorite Lambic fruit, so this certainly gets a bit of a hit for that reason. This is much more intensely fruited than Hommage (even when it was fresh), and it isn’t quite so phenolic in character; both of these qualities mean this is a better beer for me. I do wonder how this will age, but on the other hand, this one take so much effort to track down that there are other, better Lambics that I would expend my effort on getting, so I will likely not find out. In the end this is quite an enjoyable brew, and one that I feel quite lucky to have tried.

Bottle at Sour and Bitter #2. Murky deep red/bordeaux with a medium sized good lasting white head. Raspberries, almonds, staple. Taste is medium sweet and light/medium sour. Medium body, oily texture, near flat carbonation. Light sour and dry finish.

Bottle. Huge thanks to Kristophe for the bottle. Rating 3000. A bit hazy ruby read with a minimal head. The aroma was wonderful with raspberries, barnyard and oak. The taste was nicely tart with raspberries, oak, vinegar and some barnyard. Dry and elegant. A splendid beer!

17-MAY-2013, bottle @Ølbutikken with Ulkløbben. Thx Mikael for supplying this one:-) Already on opening the bottle we get a berry aroma in the room. Pours murky faded red with lasting pink head. Aroma is fantastic overripe raspberries with an underwood touch. A pleasant amount of funk to make the raspberries more interesting. Taste much the same with a lactic, milky feel. Quite sour with medium body and carbonation. I save a little in my glass and keep on sticking my nose in there while we drink other beers. WOW the aroma is good. Nice to have tried this hyped beer. No doubt with me that Cantillon Blåbær is better but this is a fantastic beer.

Had this in company of Jan, Charlotte, Craig, Stella, Loz and Morten 19.05.13 Wonderful aroma, fresh, clean, juicy squashed raspberries with just a little musty, dusty old furniture on the swirl. Zappy, tangy fresh and wonderful fruitiness. This really dries out the gums, Craig gets lemonyness and I get that a little with a touch of jiffy lemon coming through with that wonderful fresh, plump juicy raspberry. Marvellous beer. UPDATED: MAY 17, 2013 Woodshed 2.0. 750mL bottle share courtesy of BOLTZ7555. It pours with a murky ruby dark red body with purple hues that supports a tiny bright white head of foam. The aroma is huge with sweet smooth raspberry notes running right into basement like earthy goodness and then a wet dank concrete note that just plays so well with the other aromatics. The taste offers up sweet raspberry fruit and then moving into some tartness and vinegar and earthy dank basement that grounds the whole experience that brings a pleasing harmoniousness into the after taste. Lovely. Thanks Jason.

Bottle @ home 2011 vintage. Very disappointed hoped for alot more raspberries. Prefer other raspberry sours before this one.
