COMMERCIAL DESCRIPTION
Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

On tap at Beer Revolution. Aroma is a balanced blend of chocolate, roast and dark fruit with various chocolate notes being most prevalent. Milk chocolate and dark chocolate are present. Light roast character. Dark fruit notes are raisin and prune. No hop aroma. Pours black with a light mocha head with really good retention that clings to the edges. No lacing and big legs. Flavor is also dominated by rich chocolate notes. Sweet milk chocolate, some dark chocolate and light roast upfront. Mid palate you get some esters and some vanilla. Lots of complex barrel character to this one - hints of bourbon, the vanilla, some almond. Finish has a bit of alcohol heat and more bitter, dark chocolate. Full bodied with medium carbonation. No astringency and moderate alcohol heat. A lot of silkiness to this one. Overall this is a really enjoyable beer. Great chocolate and roast malt character with complex barrel notes. On tap at The American Craft Beer Fest Yesterday. Rich coffee and chocolate with a huge hit of diacytyl. This one isn’t right and shouldn’t be served.

Keg at the 4th Copenhagen Beer Celebration, Session I, 01/05/2015. Black topped with a decent tan swirl. Nose is dark fruits, touch lactic, cocoa powder, toffee, light charr. Taste comprises earthy roast, cocoa rub, toffee, tangy dark fruits. Medium + body, fine carbonation, semi drying close. Ok impy, drinks below the ABV laid down but lacks depth for me.

Alcohol burn on the tail rather thin palate carbonated. poured Into a snifter, some in this style call for repeated nose dives with treasures of Scents but this Silva was simple and well not that interesting in that regard Ash, unami char taste slightly sweet bourbon to follow Appearance is brownish slightly purple frothy head Legs on the rim oily surface

Brewed 2013 aged 18 months according to bottle. This beer poured an obsidian black with a finger or two of tan head.The complex flavors coalesce for me into one familiar old flavor, butterscotch. The caramel, the dark cherry, and the bourbon all conspire to produce a nose and flavor awfully similar to a buttery nipple. Initially I picked up a bit of vinegar, that receded as the beer warmed to room temp at 70 degrees. Once the beer settles down, the dark fruits with their tartness become prevalent along with alcohol that no longer feels the need to hide. There’s so much about this beer that screams solid stout, in the end... Silva is a rangy dark ale that really wants to play with the big boys and just comes up short.

Bottle, Cellar 3 bottling, 05/26/2015. Pours a black color, medium sized tan head, lots of sticky lacing. Aroma of cocoa dusted truffles, vanilla caramel bourbon, some fruitiness, licorice...the stock description is pretty spot on actually. Taste is similar, caramel cherry chocolate, bitterness and roast through the middle, with bourbon, chewy toffee notes to finish. Medium thick body. Well done.

Draught sample at CBC 2015. Black with a dense, tanned head. Roasted aroma with chocolate, coffee, caramel, vanilla, wooden notes - Bourbon barrel. Taste is sweet-roasted. Full body, oily texture and a soft carbonation. Finishes lasting roasted with lingering chocolate and bourbon barrel. Excellent Stout.

Black pour. Thick brown head. Painted on lacing. Chocolate, fig, bourbon, coffee nose. Taste is plum, figs, turbinado, coffee. Finishes slightly warm, but very delicious.

P: Completely black with a two finger brown head. S: Tobacco, bourbon, wood, leather and hint of alcohol. T: Very dark fruit forward, bourbon, tobacco, a touch of molasses, and black licorice. M: Softly carbonated, its full body but doesnt feel to heavy/thick. O: A little different but my bottle tasted great, balance without hiding the bourbon.

Bottle, ultra black beer, big, sticky oatmeal colored head, awesome lace. Aroma is balsamic vineagar, raisin, cherries, molasses, vanilla, bourbon, cookie dough, dried plums, roasted barley, brown sugar. Taste is molasses, vanilla, brown sugar, cherrie pie filling, salt, coffee, bourbon. This is a bit sweet, but the salty, coffee finish is almost dry. Palate is thick and smooth, carbonation subdued. If this were a bit drier...it could almost be a 5.
