Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

On tap at Beer Revolution. Aroma is a balanced blend of chocolate, roast and dark fruit with various chocolate notes being most prevalent. Milk chocolate and dark chocolate are present. Light roast character. Dark fruit notes are raisin and prune. No hop aroma. Pours black with a light mocha head with really good retention that clings to the edges. No lacing and big legs. Flavor is also dominated by rich chocolate notes. Sweet milk chocolate, some dark chocolate and light roast upfront. Mid palate you get some esters and some vanilla. Lots of complex barrel character to this one - hints of bourbon, the vanilla, some almond. Finish has a bit of alcohol heat and more bitter, dark chocolate. Full bodied with medium carbonation. No astringency and moderate alcohol heat. A lot of silkiness to this one. Overall this is a really enjoyable beer. Great chocolate and roast malt character with complex barrel notes. Aroma is roasted malt, hazelnut, cherry, vanilla bean, barrel aged, a bit of coffee and chocolate and some booze. Appearance is black, light tan head, appears thick. Taste is vanilla, hazelnut, booze, cherries, roasted malt, chocolate, very nice. Mouthfeel is thick, rich, soft carbonation and creamy. Overall, this is one to revisit after the booze tones down.

Bottle pour opaque black with moderate tan head. Nose butter, vanilla, chocolate. Taste similar to nose. Milk chocolate, vanilla, light roast, and again, some butter. Nice mouth feel. Not sure if the butter is diacetyl or from the barrel.

Draft pour at Toronado Seattle, San Diego tasting event. Pours black with a tan foam ring head. Huge aroma of rich graham cracker, chocolate malt, milk chocolate, coffee. Like a chocolate chip cookie. Delicious, but extremely rich. Sweet. Cinnamon. Bourbon hinted finish, with a lingering vanilla chocolate. One of a kind stout for sure, but one of those stouts where just a few ounces is just right. Would love to try again someday. Very fun beer.

Smells like butter. Tastes like butter. This is rancid. Really sad that they let this hit the market at all, knowing it was such a mess.

Bottle, caged and corked. Pours with the looks of a monster, meaty and black with substantial toppings. This drinks with much more sweetness than I anticipated, with a bit of candied cherries and licorice. (#6047, 10/11/2015)

Black, with a huge brown head. Smells boozy, vanilla, and fudge. Taste is Vanilla, bourbon, some dark chocolate. Very heavy palate. I mean, it was good, but, I don’t know, kind of typical? does that make sense?

750 ml bottle. 2015 Cellar #3. Pours black with full tan head. Aromas of rich milk chocolate, vanilla, and roasted malts with a bit of alcohol. Flavors of dry dark chocolate, kahlua, stale black coffee, kirsch, light bourbon, and lots of alcohol.

Bottle from the brewery. Pours very dark brown with a fizzy beige head. Tastes like dried dark fruits, earth, wood with light ash, caramel, chocolate. Light/medium body and low carbonation. Smells like red wine, chocolate, wood with light ash, dried dark fruits, sweet syrup, and earth.

Bottle. Pours deep, dark brown with a dark tan head. Aroma is outstanding with huge vineous dark fruit notes, oaks, chocolate, faint vanilla, faint bourbon, and some caramel. Flavor is rich chocolate and roasted malts, espresso, booze, oak, vanilla, dark fruit, and caramel. Full body.

Cellared for 3 months, looks like it was bottled 7 months ago. Pours nearly black, maybe a little murky and there was a small amount of sediment in the bottom of the bottle. Thick head that doesn’t last and a good amount of carbonation on the tongue. Flavor is immediately rich, dark, bitter chocolate and a long finish of the same. Bourbon and caramel, vanilla. Roasted malt, a hint of very dark malt. Creamy, silky texture.
