COMMERCIAL DESCRIPTION
We always wanted to do something unique for our 8th batch but it came around so fast that we had to meet demand for our existing beers. So we decided to hold out until the 18th batch to produce a seasonal celebration of what 8 Wired has become over the last 18 months. Batch 18 is not for the faint of heart, nor the selfish. It’s a huge celebration of flavour that’s made to share and to savour. It’s the product of our wildest imagination, brewed by hand with one goal - to make the most regal of imperial stouts. Batch 18 uses an enormous amount of malt, hops and a delicious Indian raw sugar, Jaggery. We fermented it with two different yeast strains, infused it with locally roasted fair trade organic coffee, then aged it for three months in American oak barrels. We did this not just for the challenge or the journey, but to showcase our philosophy of creativity and quality. We didn’t just make it because we could, but because we had to, and it’s the perfect expression of our raison d’être, ingenuity in flavour.

500mL bottle Pours an immaculate dense tan head suspended atop an opaque jet black body. Aroma is sensational! Dark chocolate, freshly ground coffee, molasses, coconut, Bourbon, medium-toast oak, faint dried and dark fruit undertones. Dense body reminds me of a barley wine yet alcohol presense isn’t over the top, oily texture, carbonation is low. Plenty of acrid roast bite, but sweetness balances well. Flavour continues on from aroma; lots of chocolate, lots of espresso, lots of toasted oak and Bourbon. Complexity is certainly enchanced by oak; spices, and coconut, and vanilla, and typical "woodiness", that lingers. Alcohol is warm, high bitterness is somewhat welcome. Wow! I sit here sipping this thinking "goddamn" and then vocalise my impressions of it pronanely when I see the big 12.5%abv. This is serious beer just how I like it...i spose my only complaint is the palate drops away a bit quicker than i’d expect (perhaps the sugar?), but seriously great beer...better than I could have imagined!

500mL thanks to rasmusott. My 300th imperial stout rating. Fizzing, weak brown head atop clear mahogany. No lace. Nose is a bit vegetal with mild tomato. Taste is silky and rich losing off DMS character. Palate is richer, a bit tangy. Not bad. ---Rated via Beer Buddy for iPhone
