Nothing quite like a special bottle of Stille Nacht on Christmas! Pours nearly flat with a cloudy, rusty golden color. After a minute in the glass, a thin head with large bubbles materializes. The aroma is subtle and feels locked up... like it will break out with age. Right now, it is filled with cherries, oak, vinegar, caramel, and some moldy funk... incredible. On the palate, the beer has an almost oily texture that is cut through by the mild carbonation and the acidity of the flavor profile. The flavor is complex as notes of sweet red fruit, wine barrel (shock), lemon mix with others in a fleeting fashion... almost ethereal. Finishes mildly tart, but I’d never call this sour. Killer beer right now and will age with the best of them, for sure.

Bowlttle. Amber with white head. Nice spicy funky aroma, oak and wine. Taste of flanders funk, spicy, oak amd wine. Nicely tart. Very nice.

Bottle @ Brewery. Pours hazy orange with a offwhite head. Aroma of malt, yeast, brett, fruits, grapefruit, grapes, oak, redwine. Flavor is light sourness, caramel, malt, oak, balsamico, light vinegar, redwine, fruits, grapes, alcohol. Medium to full body, average carbonation, lasting acidic finish with some alcohol. 030814

750 Ml bottle Cloudy orange color, 2 finger white head. Very persistent and good lacing. Insane nose. Red wine, apple, pear, oak, grape and bubble gum. Brilliant in how complex the nose was. Taste is mostly fruit (apple, pear, and grape) and red wine driven. Notes of sourness and sweaty gym socks. Hit like home though. The 12% was a serious kicker. Feel was more of a BSDA than a sour but gave the appearance and taste of a 5% sour. Silly good beer.

(750ml bottle) cloudy orange, soapy white edge bubbles. Nose is herbal, gin, Bordeaux, coriander, grapes, slightly mossy. Taste of red wine barrel, moss, bit of Granny Smith apple, cinnamon, coriander, brandy soaked apples, super complex but the carbonation being very low keeps it de being a world class beer.

Bomber. Thanks to KyotoLefty. Concentrated dark fruit nose, with berries and sweet apples, and some sourish notes. Medium orange/amber color. Sour juicy initial: raisins, apples, plums. tang hit quickly and then mellows. Light alcohol warmth. Finish is still charging ahead. Solid body. Effervescent mouthfeel. Wine-like in it fruitiness. Amazing aroma. Complex flavor changes throughout. Both intense AND balanced. Great stuff.

UPDATED: JUN 28, 2014 Bottle at home with friends, courtesy of Armin. Thanks man! Pour is slightly hazy orange with a small white head and good lacing. Big caramelly, brown sugar, salted toffee, fruit skins, dough, light leather, and earthy aroma. Taste is sweet caramel, toffee, light acetone, orange juice, lemony, and grapey with a big sour finish, Medium body with soft carbonation. Seems to be infected and I’m pretty sad about this one.

Bottle @ Stephen’s house. Thanks Armin! Pours a reddish orange appearance with a thin tan head. Orange citrus / tangerine, red grape, pretty funky, tannic / oaky, quite cobweb-y aroma. Fairly earthy / dirty / cobweb flavor with quite a bit of citrus, red grape, and a slight bit of chemical. Kind of a strange beer.
