COMMERCIAL DESCRIPTION
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Sent to me from my good friend from Alberta, none other then Kyle, You rock brotha! Cantillon can do no wrong IMO. Everything you want is there: the sour flavor, the funk and the tartness. They pride themselves on being very consistent and this one is a great example. Hopefully I’ll be able to try this again in the future. Outstanding and one I’m really glad I got to try.

0,75l bottle @ Pikkulintu. Pours hazy yellow with a medium head. Aroma is just sour malts. Flavor is sweet acidic malts. Very fine balance. Great!

Draft - Light tart white wine notes, some flower and petroleum. Cloudy gold with a decent white head. Tart up front, sweet and herbal, grassy and a bit bitter in the finish. Very dry.

750 ml capped and corked bottle, back label says bottled 24 September 2012, best before September 2022. Labeled as Cuvée St-Gilloise. Served in a Prairie Teku, the beer pours a hazy golden/orange color with about an inch off-white head. Head retention and lacing are both good. Aroma is nice, it’s smells like apricots, hay, funk, citrus peel and some peppery spice. The brew tastes like citrus (mostly lemon) peel, hay, funk, bready/grainy malt, oak, peppery spice, earthy/floralness, and some white grapes. There’s a nice mix of tartness, fruitiness, and funky/earthiness. Mouthfeel/body is light/medium, it’s smooth and easy to drink with a good amount of carbonation. I thought this was good, definitely worth picking up if you come across some!

(Cantillon Cuvée des Champions) As Cantillon Cuvee Saint-Gilloise, 750 ml bottle at home, served into a tulip, ABV 5% Golden orange colour on the body, bright and just a tad hazy, with a tall white head, with okay retention, leaving light lacing around the glass. Nice floral aromas, some light grapes and wine-y notes as well. Very sour taste, at least during the first sips, floral notes, light cork/wood, grapes, very nice. Thin body with good carbonation, very refreshing with a light tartness on the palate. Good gueuze.

Vinatge 2014, en fût. Très funky. Une gueuze avec un excellent côté exotique. Très savoureux. Une de mes meilleures de Cantillon jusqu’à maintenant. Reste à comparer avec la version bouteille qui se fera sous peu.

Draft at Big Wood 2014. Pale golden. Beautiful nose. Apricots, funk, and hay, over citrus. Same notes in the flavor, slight herbal/vegetal. Nice and full body. Very tasty!
