A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Sent to me from my good friend from Alberta, none other then Kyle, You rock brotha! Cantillon can do no wrong IMO. Everything you want is there: the sour flavor, the funk and the tartness. They pride themselves on being very consistent and this one is a great example. Hopefully I’ll be able to try this again in the future. Outstanding and one I’m really glad I got to try.

Draft at Churckey as St. Gilloise, 7/12/14. Pours a hazy peach color with a medium sized frothy white head. Good head retention. Aroma of soft tartness, stone fruits, peach, white grape. The taste is tart, bright funk, grapes, cherries, stone fruit. Medium bodied, low carbonation, lingering tartness.

Tap at Pikkulintu, Helsinki. Colour is cloudy orange with small white head. Aromas and flavors: Fruits, sourness and some sweetness.

Bue en bouteille de 75cl, couleur dorée trouble, joli col de mousse, effervescence importante, une bière assez extraordinaire, beaucoup plus facile à boire qu’une Cantillon Classique, attaque sur une pointe d’acidité citronnée et orangée, et ensuite cette acidité ce mélange à de l’amertume type pamplemousse, mais ça continue sur de l’amertume du Dry Hopping et là ça devient fou on a une attaque sur le houblon amérisant très forte et ensuite une belle attaque sur les fleurs jaunes et sur les plantes vraiment une tuerie !!

On tap at de Wildeman. Hazy golden with a white head. Sour fruity aroma, barnyard, funky. Taste is vineous, sour fruits, long sour aftertaste. Very nice.

Dry-hopped variation on Cantillon geuze, made for a socker club in 2004. No young lambic, the result being complex as ever, estery, sulphuric and funky as anyone will expect from Cantillon, through which a fresh, bitter hoppiness cuts. I usually don’t like my lambics too hoppy, but in this case anyone in favour of authentic lambics will surely make an exception, and so do I.

At Justin’s house warming party. Aroma is classic cantillon funk, fan fucking tastic, fuck yeah light hops. Taste is funky, light acidity, very nice cantillon funk, but not quite up to the very high standard of cantillon.

Draft at Akkurat, October 2013. Pours hazy yellow/goldenish with a quickly settling small white foam leaving a lid on the surface. Very fresh funky (is there such a thing?) aroma of elder-flower, hay, citrus, horse blanket, wood. Taste is a lovely complex one with a moderate sour beginning of citrus and red berries, leaving rooom for a slight rounder feel when some slight hints of elder-flower appear, orange and a slight grape hint, finishing sour and dry. Medium body, soft carbo, oily texture. Very fresh and rich without loosing its typical gueuze-character, lovely.

Nische (669) - Saltsjö-Boo, SWEDEN - AUG 3, 2014
Bottle. Light hazy golden with a large white head. Herbal and dry flowers, dusty, light barnyard, wooden, lemon, cheese. Medium body, oily texture, soft carbonation, medium sweet and sour. For me this is the perfect pairing for classic moules frites.

Sample@Quintessence 2014 as "Cuvée Saint-Gilloise". Gueuze fort portée sur le froment, un peu comme un blanche sure mais avec de la rondeur en plus, et sèche. Le corps doux est assez savoureux: à la fois rond, fruité et biscuité développant des saveurs herbacées des différents houblons. La finale st assez longue, surette et peu amère. Un délice!

On tap at capitol beer and taproom pours golden Orange with white head taste is slightly sweet with a good sour taste amazing
