COMMERCIAL DESCRIPTION
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Clear orange golden colour, firm white head. Floral aroma, citrus, lemon peel, lime juice, funk, light rubber, some horseblanket and lactic acid. Light sour flavour, lemon juice, fresh lactic acid touch. Sour finish, citrus, lemon juice and malts. Lovely.

Bottle thanks to Jason. 2013 batch of Cuvee Saint-Guilloise. Cloudy orange pour with a small head that fades to a thin ring. Love the aroma. Funky cheese, pulpy orange juice, lemon, oak, and grass. Taste is light to moderately sour. Moderately tart. More orange juice, cheddar, dry leather, hay, grass, light pepper, and light barnyard. I liked this way more than I expected to.

Kveldens siste (og mest særpregede) etter at esb’en har fått lokk på seg og satt til gjæring: Uklar guloransje og meget kort skum. Betagende besk aroma og smak hvor aprikos, mandarin og bitter appelsinmarmelade er det første jeg tenker på - etter hvert melder det seg også noe honningaktig. Flasken ble så alt for fort tom.

Bottle of Cuvée Saint-Gilloise shared with JMD at HNB 03.04.15. Hazy orange. Small off-white head. Fruity aroma, with sour tropical fruits, marmelade and succade. Similar, and very sour taste. Honey, peach and sour citrus. Wonderful!

2010 bottle, pours a hazy gold with a large light tan head. The smell is tart fruit, funk, yeast. The taste is tart, funky, some bitter hops with a dry ending. The body is light with active carbonation. Great stuff...

This poured a hazy yellow with a white head. Aroma was of minerally water, lemon juice, some hay, and dust. Flavor was mild tartness, very earthy funk character and minerally.

Bottle at Hilpeä Hauki. Hazy amber color, white head. Sour taste with citrus, tart, hops, acidic notes, toast and grass. Sour finish with citrus, acidic notes, hops, tart and grass. Very nice lambic, almost too easy to drink.

Hazy yellow pour. Minimal white head. Aroma of light funk, clay, must, lemon. Taste is lightly sour and grainy. Slightly dry finish. Medium body and medium carbonation. Very well balanced.

2014 bottle. Hazy amber with a minimal head. Aroma is vinegary, tart with lots of green apples. Taste is as above but with quite a lot of wood. Light body, low carbonation, dry mouth feel. Dry and woody after taste.
Not that tart as expected though, could probably have done with some age.

Bottle from Lekkerbier, as Cuvee Saint Gilloise, dated 12 Nov 2012, BB Nov 2022, large sample. Slight hazy golden color, big frothy white head. Aroma is flowery, slight grassy, bit tart, slight funky, bit peppery as well. Soft to medium tartness in taste, slight grassy bitterness. Medium to high carbonation. The flowery and grassy hoppy notes go very well with the clean lambic. Lovely stuff.
