COMMERCIAL DESCRIPTION
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

2011 cork date. Split two ways. Consumed on 1-11-13, reviewed from notes. A: Clear copper with a foaming white head. Serene inside of the glass. N: Delicious. Musty hops, lemon zest, and attic spaces. Oak holds down the fort with some black peppercorns and graininess. Hints of grapefruit and pineapple. T: Lemons, straw filled barn stalls, pineapple, horse blanket, oats, and wood. There’s a very balanced sourness here and some excellent funk. Tart without being grotesquely sour. M: Perfect. Like drinking a pilsner it goes down so smoothly. O: Accomplished beer and one of my favorites in the Cantillon pantheon. The hops and the lambic work for me.

Draft at Big Wood 2014. Pale golden. Beautiful nose. Apricots, funk, and hay, over citrus. Same notes in the flavor, slight herbal/vegetal. Nice and full body. Very tasty!

Saint Gilloise, bottled January 7, 2013. Pours a clear orange-gold with very small head that subsides. Aroma is very musty, spicy, and earthy, with spicy hops, cork, cedar, and citrus peel mingling with Mediterranean herbs, grass, peach, lemon zest, and autumn leaves. Taste is vinous and juicy but austere, with white wine, orange, and grain fading into serious oak and spicy/bitter hops, with a balanced sourness and faint fruitiness. Finish is quite tannic, with pronounced barrel notes. Fairly low carbonation. Very good.

75cl bottle as Saint Gilloise. Light golden with bubbly white head that leaves a nice looking ring of bubbles. Sour lemon, lemon peel, light grainy and funk, hay. Lots of German style hops, light green raw veggies. Light sour taste with a bitter touch, light sour finish. Great balance and the hops work really well here. Beautiful and complex beer. 750ml bottle Cuvee Saint-Gilloise from beermerchants.com. Golden colour, bubbly white foam head and aroma of funk, lemon rind citrus, yeasty. Taste is fruity malt & grain, zesty lemon & grapefruit sour, woody oak, barnyard and some light bitterness. Tangy mouthfeel, medium bodied, fine carbonation, dry sour finish. Very drinkable.

Cuvee Saint-Gilliose, from the bottle. Pours golden with a humongous foamy white head that reduces to a layer of foam around one-finger thickness. Aroma is funk and lime. Taste is crisply sour, slightly bitter lemon, tart and a dry finish.
