Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Pours a hazy copper red with a tan head and lacing. It has a nice aroma of biscuit, amber malt, and some spice. The flavor is dark malt and spices up front, with a biscuit backbone and dark fruit flavor over a medium body.

The fruity aroma is soon realized. It has a reddish, slightly cloudy, with a permanent cream. At first the caramel flavor is remarkable passing gradually to resemble a cherry liqueur, cherry one brand which is more caramel than the other style. The malt is present. At the end of the drink becomes drier and a slightly bitter (offsetting the initial sweetness. It is a medium-light-bodied beer. Overall shown a very different dubbel with this taste very strong cherry liquor. I like this taste and to be honest I do not know until it can be any unwanted defect by most tasters. I really enjoyed this Dubbel configuration.

Very little aroma. Deep copper in color. Sweet at first, well balanced with hops. Lots of carbonation on the palate. Starts to foam up in your mouth. Carmel type of finish.

Nice red ale with a sweetish taste and champagnelike carbonation. In conclusion a bit boring but a very solid red ale.

Warning: Chimay’s beers aren’t that tame and will spontaneously come out of the bottle roughly one second after getting rid of their virginity cap ;) Top made of big bubbles. The kind of beer you can drink lots. The flavour still lives on after swallowing.
