COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Aromatic vanilla bean, caramel, oak and cinnamon on the nose. Appearance is a cloudy dark brown with a tan foam. Incredibly complex flavors of coriander, maple, brown sugar, roasted caramel, wood and a touch of vanilla. Big alcohol warmth on the finish. Flavors are complex and fantastically balanced. Overall, an absolutely incredible brew that boasts a ton of complex flavors. I’d give this an A+ rating.

Cloudy dark brown ale with large head. Malty caramel, chocolate, and dark fruit aroma. Full body. Complex taste that is similar to the aromas. Aftertaste is long lasting and full

Bottle from Cedric’s tavern. Pours dark, dark brown with a khaki head. Doesn’t leave a lot of lacing in the glass. Has a big molasses and Belgian yeast thing on the nose. Lots of brown sugar and dark fruits on the tongue. Hides it’s alcohol well. Nice.

Bottle @ home. Pours with a dark red, almost brown colour, big long lasting white frothy head. Aroma is medium to heavy malty, with notes of fruit and chocolate, softly hoppy, medium yeasty. Taste is medium to heavy sweet, softly bitter, softly sour, very softly salty. Medium to heavy body, creamy texture, soft carbonation.

Bottle to a Chimay glass. Aroma is sweet, light, yeasty. Pours a slighty hazy reddish-brown with minimal head. Taste is moderate deep fruit. Slight malt. Yeast in moderate doses. Medium thin mouthfeel. I believe I have liked this beer a lot more in the past. Pretty uninspiring here. Looking forward to trying it in Belgium in two months and may re-rate.

330 ml body, pours brown with red tinges, medium tan head without much retention. Dark fruit, brown sugar, caramel. Similar taste with some spice and warming alcohol coming through. Great mouth feel.

Poured from 330mL bottle [best before end 2015]. Cloudy, copper brown with dissipating fizzy beige head, a bit of sediment at the bottom. Aroma of dark red fruit, raisin, caramel and toffee. Flavour comes through, but a little muted, minor alcohol taste, a little flat.

Bottle, bb 2019. Pours ruby/brown with a tan head. Brown sugar, raisins, wood, spices, caramel. Taste strangely reminds me if vanilla coke ( but in a good way i suppose). Sweet, fizzy carbonation, body feels thin after the full nose. Nice begian ale, but not that special really.
