COMMERCIAL DESCRIPTION
Due to its authenticity, Earthmonk received as little sugar as possible during bottle conditioning in order to preserve all original aromas and flavours. This beer comes with little carbonation and a mini head. Is best served at cellar temperature and poured generously, meaning from a hight of approximately 15 to 20 CM, in an upright standing tulip glass. A big bubbled head will quickly make place for the Earthmonk coming alive! Bottle-conditioned in 33cl (5000 btls.) and 75cl (1000 btls.). At Struise, we never retire beers. At ratebeer, Beers are retired when a new batch is not bottled within 12 months. As Earthmonk takes 18 months to age on oak... we have to be patient.

Pours a dark murky reddish brown color. Aromas of dark fruit, yeast, vinegar, and a touch of wood. Flavor is sour, yeasty, wood, with a tart sour finish.

330ml bottle from trade with Sparky27 a couple of years back. Pours hazy dark brown with small off-white head. Aromas balsamic vinegar, caramel, dark fruits, and some wood. Flavors of caramel, balsamic vinegar, wood, acidic tartness, and some cherry and raisin. Lacking carbonation but that is ok. Has nice amount of mouth puckering goodness. Solid.

Pours a hazy and brown beer with a weak offwhite head. The aroma is acetone, raisin, caramel and dried fruit. The flavor follows the nose with additional notes of balsamic vinegar. The palate is sweetness with acidic notes. Overall a good beer.

From trade with Countbeer. Thanks. Pours brown wtih a small beige head. Aroma is caramel, balsamic vinegar, apple, raisin and light acetone. Flavour is caramel, balsamic vinegar, acidic, raisin, light plum and light acetone.

33cl Bottle at AHBC, 2008 vintage. Deep reddish brown colour, off white head. Aroma of balsamic vinegar and strawberry jam, grapes. Flavour is sweet and sour, fruity, light malty, metallic, balsamic vinegar sourness, red fruits, wood, tart finish. Light to medium bodied. Not my cup of tea.

Pours murky dark brown color with minimal, quickly disappearing head. Aroma has lots of fruits, peach, apricot, apples, plums, raisins and berries, especially sour bilberries, some mild spices and malt. Flavor of plums, peach, apricot, ripened apples, goose berries and lots of bilberries, mild spices and some sugary malts. Mildly sugary and slick palate with a strong and lasting fruity aftertaste. Very interesting mesh of flavors and has lots of layers.

2008 bottle. Ma,ma mia, just when I thought i had seen everything De Struise could throw at me, I try this. Tiny head. Soft, delicate nose of vanilla, wood, spice and vinegar. Vinous notes as well. Rich and soft. Really refined. Soft vinegar, chocolate, cherry, lemon, wood with a tart, though not puckering finish. Leaves some fine beading on the glass when swirled. Oily film on top that leaves a lovely cosmos swirl pattern when agitated. A real treat. Thank you to the staff at Bel Auge in Roppongi for pulling out their last bottle (after repeated cajouling - sorry guys!) for me.

Bottle 330 ml. Pours a hazy brown color with very little head to speak of. The aroma is tart fruity, cherries, woody and earthy. The flavor has plenty of tart dark fruits, grapes, woody, and earthy notes. This was an interesting spin on a sour, but well worth a try.
