Bottle picked up at de Bier Tempel in Brussels, consumed later on in our room at t’Keizershof in Brugge.
The beer pours a deep purple color with a small head that fades fairly quickly.
The aroma is very funky, barnyardy, with some light citrus rind, and fruit forward notes like bright grapes.
The beer is very dry in flavor and is also very sour, not unlike gueuze in this regard but certainly different. The light fruit and leathery tannic character of the grapes is skillfully matched & balanced with the character of the Lambic. In fact the grapiness starts with a touch of sweetness that passes very quickly allowing for the tartness and dryness of the beer to take center stage. The grape character and the funky sour lambic really interweave and at times lean on each other to become something truly greater than the sum of their parts. Making a rich, bold beer that is at times subtle, and elegant all around.
Easily among the finest and the most enjoyable beers I have ever tried.

On tap at CBC, Clapham. Pours a cherry colour with a pinkish head. Aroma is lovely - wine, cherry, custard. a little raspberry. Light body, full carbonation. Dry and pleasantly sour with grapes, a little woodiness, lemon, strawberry... and more besides. Lovely.

750mL. 2009 bottling.
A: Plum tinted red. Thin whisp of head.
N: Sour grapefruit , wine grape, oak, peppercorn, lemon, hints of cherry and leather. Earth.
T: Home run hitter. Plenty sour, some malt and fruit to balance.
M: Light, carbed, drinkable. Wonderful as the Cantillon wont.
O: Another excellent beer, albeit not as fruit forward anymore. Delicious.

Bottle. Pours slight haze bold ruby, dark red with thin reddish white head. Smell is merlot grapes, citrus, light brett funk. Taste is sour grape, fresh red berries, cherry, strawberries juice, merlot tannins, a little acidic, slight dry wood towards the end. Would love to try again with more age. Delicious.

Notes from backlog. Was my second Cantillon, and I guess I had hyped it a bit too much. Very tart, but the grapes did not affect it to the degree I had expected.

Red. Aroma is subtle funk and grape. Taste is oak, grape, tartness, mild sweetness; lots going on. Overall, one of the best fruit lambics I’ve yet had.

Bottle share thanks to droofus. Slightly tart nose with tons of fruitiness.. Not very tannin like. This is awesome. Almost like a very tart grape soda. Perfect balance of grape and sourness.

Pours a deep ruby color. Big barnyardy, horse blanket, funky sour aroma. Big funky flavor as well, barnyard gueuze character. Fruity flavor, grape and sour cherry like in the finish. Big sourness throughout but balances well with fruity character.

2006 bottle pours muddled brown purple. Big funk nose. Big tart and acidic start. Grape sweetness appears. Solid body.
