COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Pours dark orange with a smooth white head. Strong fruity and malty aroma with notes of spices, caramel, plum and dark fruits. Finish is strong and spicy. Alcohol burns through slightly too much. Complex, but balanced strong ale.

Bought this bottle at Capone’s last year. Bottled in 2009. A - Pours murky amber orange with a decent one finger tall white head leaving light lace down the glass. S - Smells of tons of sweetness. Hints of caramel malt, candied sugar, dark fruits, some fruitiness, and plenty of booze. I would say this was the best part of this beer. T - Starts off with quite a bit of sweetness - mostly candied sugar and sweet caramel malt - slowly giving way to hints of dark fruits, light spice and lots of warming booze. The sweetness is pretty cloying, combining with the booze to leave the pallet coated long after the finish. M - Medium body and flavor with moderate carbonation. Sweet, cloying feel that never really goes away. Quite a bit of booze initially only getting stronger over the course of the glass. O - I have had this one in the past and it was much better than this bottle. I will have to give this one another chance in the future because this bottle did not do it justice.

senza dubbio la migliore birra della de dolle! molto dolce e molto piacevole da bere, con un sapore unico e inimitabile...l’unica pecca e che è una birra natalizia e quindi non si riesce a trovare tutto l’anno ;-)

En botella.color dorado cobre.espuma densa con bonitos encajes.impresionante despliegue en aromas.naranja, caramelos, frutos exoticos y alcohol.al paladar deliciosa, floral, embriagadora,entra casi sola, alcohol muy bien escondido.

Pours a cloudy dark orange color. Huge fluffy crater filled head. Lacing all throughout the glass. The glass was full of spiciness, tropical fruit, alcohol, and candi sugar. The taste was fruity up front. Apricot and grapes. Then the spices kick in with the alcohol and a bit of funk. Smooth, medium bodied but I thought was a tad to big carbonated. Overall a really good beer but doesn’t match Oerbier for me

2011 edition. 33 cl bottle. Pours a beautiful sunset orange, I think I’ve never seen another with this colour, with an inch-thick off-white head. Aroma of caramel, sugar, a hint of booze, spices [ginger, cloves]. Sweet, but the awesome thing is that it stops right before getting nauseating. Sugary, caramelly, spicy, with a long sweet & spicy aftertaste. Warm, with medium body, leaves your mouth very clean and dry. Wonderfully done, my favourite Christmas ale so far.

Bottle, 33cl, 2010 vintage. Pours a cloudy amber-orange with a white head. Smells of belgian yeast, orange zest, speculoos cookies, and some other fruits. Tastes mind-blowing; there’s a lot going on here. All the aromas are present in the taste, and the speculoos cookie flavors are prominent, with a big kick of fruitiness and candi sugar, finishing with a warming alcohol. There’s just a mild bitterness, but also some citrusy acidity in the finish. Full bodied. Soft carbonation. Texture is quite smooth, until the finish which ends a bit like a sugar cookie, actually, with a the lingering somewhat gritty sweetness all around the palate. This is a really interesting and good beer with a lot of flavor. I might just have to try some more samples ;-).

vintage 2010. pours a murky dark yellow/orange color with a big bubbly head. typical Belgian aromas along with some sweet smelling fruits. carbonation has a slight bite to it. could use a dulling down. but other wise the taste is fantastic. not very well versed in the Belgian styles but this beer is definitely one of the better I’ve had the pleasure of trying. malts and hops balanced very well throughout.
