Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

late 2008 .. . pours a bruised week old banana brown .. has a high spritz .. different fun flavours; honey, central region belgian cellar, golden syrup, and wet malty leaves .. . beautiful full head, medium lacing .. . upbeat aromas .. great abv masking .. . i can see this guy going places.. .

A amber beer with a tall white head. Aroma is sweet and fruity. Taste is also sweet, with some yeast spiciness. Vinous and alcoholic. Notes of honey and fruity syrup. Full body and strong. Lots of sediments floating.

Bottled Oct. 2, 2009. Poured a murky dark orange with a creamy head. The aroma and taste is malts and dark fruits with a warm alcohol background. This brew is now one of my favorites. Great depth... complex but very balanced, not too sweet, mild carbonation. One of the best beers I have had.

Pours with lots of yeast and lots of foam, and an orange color with a huge ivory head. It was like the foam never wanted to stop. Aroma is very fruity, oranges and yeast with spices. Flavors is again very fruity, dry fruits, oranges, peach, apples, a good note of gingerbread with yeast. High carbonation, very creamy, sweet and bitter. Very complex and well ballanced, with a little liquor finish.

Pours a cloudy golden yellow with a huge white foamy head. The aroma is strong with hops, yeast, and sugar. Flavor is quite sweet, fruity, and hoppy and has a decent bitter bite in the finish. Has a moderately dry finish and a nice palate. Almost reminds me a bit of Orval but fruitier and sweeter.

11 and 3/5 ounce bottle. Pours a chunky orange with a ridiculously massive ivory head. Aroma is just awesome; HUGE sweet fruit and floral aromas on top of a slightly funky sourness lurking beneath. Flavor is again very fruity; oranges, apricots, peach, then comes earthy yeast and spoiled cream reminicent of a good trappist abt. Alcohol is present but not bullish. Medium density, creamy mouthfeel. A hearty, soulful, delicious opus. Overall, excellent to world class.

2008-version, 33 cl, bottle. Blonde beer with a big white lasting head. Malty aroma, some fruits and spices included. Taste is malty, alcohol, light bitter aftertaste. It start very strong in the taste but becomes much more balanced when drinking the beer. The best winter beer I drunk so far ever.

Orange with a dense head and a lot of carbonation.Sweet and dusty aroma, with some citric notes, yeast and alcohol present too. Unexpected bitterness coming from a Belgian Strong ale, very dusty and dry, but also sweet and fruity - quite complex. The palate is just amazing: creamy!
