Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Aroma estupendo, genial, casi perfecto. Complejo, en donde se conjuntan infinidad de notas. Destaca principalmente la cebada, así como levaduras dando esteres frutales intensos. Notas citricas (naranja), así como algo de miel, clavo, canela y frutos secos. También se distinguen ciertas notras florales provenientes de la técnica de lupulizado en seco, En cuanto a apariencia, cerveza color naranja brillante con ciertos destellos ambarinos a la luz. Fuertemente turbia y opaca en virtud del alto contenido de sedimentación, el cual aumenta al ser una botella embotellada en el 2008 con 4 años de guarda. Cuerpo redondo y completo. Corona de espuma abundante al servir. de retención media, siendo quiza el hecho de su alto contenido alcohólico lo que no posibilite una mayor retención. Carbonatación media. En boca dulce, cremosa, citrica,densa y excelentemente bien equilibrada. Al paladar y de la misma forma que en nariz, sumamente compleja pero exactamente bien equilibrada. Se perciben notas ligeramente dulces y amargas, pero a la vez, sensaciones cítricas y acidas conjugandose y complementandose para dar resultados sorprendentes y únicos. Las notas que se destacan son a naranja y ligeramente limón, miel y datiles. Frutos secos y caramelo. El final es ligeramente amargo, aun que con una larga duración. En resumen tengo que indicar que se trata de una excelentisima cerveza. Sabores sorprendentes y únicos que se complementan para hacer una cerveza excelentemente lograda de tal forma que casi se me pasa complementar que casi hasta el final del trago y solo hasta el final, se perciben sus potentes 12% de alcohol. Cerveza de temporada que definitivamente no debe faltar en cada "Noche de paz" (Stille Nacht en Aleman).

Pours cloudy pale gold with a short, short-lived white head, minimal lacing. (3/5) Nose is boozy dark fruit, candi sugar, spices, green apple. (6/10) Taste is moderately strong sweet, mild tart. (6/10) Medium slightly oily body, moderate to low carbonation, lingering boozy finish. (3/5) Well, subtle this isn’t - nor is it light, refreshing, or any of the other adjectives one normally associates with the beers of spring. No, this is very firmly a winter beer - one appropriate for lighting a fire in your belly as you gingerly sip it during the long cold months of torpor. And at a beefy 12%, there’s fire aplenty. I don’t say this often, but this might be too emphatic a beer - a little more even-handedness and balance would go a long way here. Still pretty good, mind you... (12/20)

J’en suis encore tout retourné !! Cette bière est un chef d’œuvre. Un beau col de mousse persistant. Une bouche sirupeuse avec des arômes de genièvre et d’épices, un arrière goût qui vous fait voyager dans les fleurs de houblon. Je suis impressionné par cette merveille, par cette brasserie et même par cette Belgique !!!

33cl bottle at Dulle Griet, Gent. Pours slightly hazy deep golden with some sediments and a fairly modest head. Complex somewhat earthy and fruity aroma with notes of dried fruits, Belgian yeast and spices. Sweet, earthy and surprisingly well balanced with complex flavours and a certain dryness in the finish. Full bodied with fairly soft carbonation. Heavy on the sugar and the alcohol, but well integrated and surprisingly well integrated.

Bottle at Bruxx with Nick & Rachel. Pours Golden Amber with a good White head. Aroma of booze, cane sugar and some fruity citrus. Some honey sweetness to the taste. A background of hops and cloves. Lots of sweetness and lots of booze. Very nice

2015/04/25 - Vintage 2012 from Kulminator in Antwerp. Pours a hazy, dark orange/amber colour with a thick foamy, off white head that lingers and laces nicely. Aroma is yeast, dough, molasses, sugar, gingerbread, cinnamon, apple and fruits. Taste is sweet; molasses, gingerbread, candi sugar, with bread notes and some nice apple/fruity flavours. Mouthfeel is medium and oily with average, smooth carbonation and a sweet, boozy, warming finish. Really great stuff. Shared 11.2 oz. bottle poured to snifters, showing a cloudy, orangey gold color, with frothy, white head foam, and waves & spots of lacing. The nose was a touch of yeast, ripe fruit notes as apple, subtle spice, and vinous-like character. Medium bodied, with lively carbonation, the taste was tart, adding citrusy & earthy bitterness, noticeable, but fairly disguised alcohol presence, with an effervescent finish. ---Rated via Beer Buddy for iPhone

330ml bottle from Belgium in a Box - Hazy yellow, ugly looking beer to be honest, nose is bready. yeast and warm pizza dough. Taste is fresh and apple at the start, dangerously drinkable, then ends with a generous warming feeling as it goes down. Palate is thick and oily. A real gem. Looks can be deceiving.

Shared 11.2 oz. bottle poured to snifters, showing a cloudy, orangey gold color, with frothy, white head foam, and waves & spots of lacing. The nose was a touch of yeast, ripe fruit notes as apple, subtle spice, and vinous-like character. Medium bodied, with lively carbonation, the taste was tart, adding citrusy & earthy bitterness, noticeable, but fairly disguised alcohol presence, with an effervescent finish. Quite enjoyable!

Bottle at Gradi Plato Epiro, Rome. Orangish with golden reflctions, pretty turbid. A little persistent foam layer with just some little bubbles. Aroma is pretty intense, but not particularly lasting. Marzipan and bread, canned fruit, raisin. Coming to tasting, I have to say: Great body! Really dense, almost creamy mouthfeel. Start sweet, then you can appreciate a sour note, then remains a medium, dry, persistent bitterness. We can distinguish fruit, sugar, spices (pepper). Alchol flavor is soft despite the ABV. Amazing in its complexity, perfect for aging.

From the bottle, this beer simply smells like beer. Unable to distinguish anything. When poured the aroma evolves into apple and champagne. The taste works in the other way, first the champagne clone and then an overloaded taste of alcohol. Clearly not my type.

Ambrée trouble, sédiments en suspension, effervescence moyenne-forte, col blanc abondant. Principalement maltée, fruitée (prunes principalement) sans être trop sucrée, trop d’alcool, légère amertume sur la fin.
