COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

E’ una meraviglia. Dio quanto è buona. Un bel colore aranciato con schiuma abbondante mediamente persistente. Al naso appena versata si presenta con note di yogurt di banane con la presenza di sentori di fichi, datteri e l’alcol. Molto potente e in grado di aprirti il naso. Al palato ingresso carbonato. Si sentono i 12° e vi è un ritorno luppolato che resta per tutta la bevuta e che accompagna le idilliache noti dolci dello zucchero candito e del fruttato. Molto complessa, corposa ed elegante come una lady in attesa del principe azzurro. Dio mi ha mandato in visibilio. Una delle miglior Belgian strong ale mai assaggiate. Ottima per davvero. Questi sanno come si fa una dannata birra.

2007 Edition 330ml bottle served in a Trappist chalice. WOW! Strong smell of strawberries and grapes at the moment I was pouring it. A: Very nice hazy amber color. A huge bubbled beige head and many lacings left S: Fantastic. Peculiar. Black fruits and oak are VERY evident. Moderate alcohol despite the high ABV. Belgium yeasts T: Again, fantastic. Very peculiar. Fruits and Belgium yeasts are evident. Oak. Sweet upfront (little bit chocolate). Dry aftertaste M: Heavy body. High carbonation D: Wonderful beer. Bring me a cask! --- 2008 Edition (2010.12.28) 0.33l bottle served in a chalice. A: Very nice hazy orange color. A huge bubbled beige head and many lacings left S: Strong presence of fruits (plums and peaches) and oak. Moderate alcohol despite the high ABV. Belgium yeasts T: Again, fantastic. Very peculiar. Fruits and Belgium yeasts are evident. Oak. Very dry aftertaste M: Heavy body. High carbonation D: Wonderful beer. This 2008 Edition reminded me a Strong Pale Ale compared with the 2007 version which is darker and smoother --- 2012 Edition (2012.12.03) 330ml bottle served in a tulip glass. A: Pours a nice orange hazy color. Lots of chucks floating around. Forms a huge bubbled white to yellow head. Good retention and many lacings formed and left S: Sweet and fruity. Notes of plums, peaches and grapes. Strong notes of oak. Quite winy. Bready Belgian yeasts. Moderate alcohol despite the high ABV T: Great taste. Very grainy and spicy. Sweet upfront with notes of candy sugar, dark fruits and bready Belgium yeasts. Strong notes of oak. Bittersweet Belgian style M: Heavy molasses body. Good carbonation. Cinnamon and brown sugared apples, pomegranate, red grapefruit, faint candyish sweetness, fusel, band-aid phenols, hop spice and citric tartness all reach out to give your nasal passages an invigorating tingle they won’t soon forget. Unique, opaque rusty red-orange color with a very creamy and lasting head and thick sheets of intricate lace. Flavor is balanced with sweet, malty, fruity and hoppy aspects combining, then overtaken, drenched by a wave of acidic, citrusy tartness and many spices. Finishes with a dizzying blur of flavors, a lemon here, a bit of sugar there. So many levels are touched on here.

The Dolle’s famous winter beer, a classic since 1982, with off-white, regular, relatively stable, sticky head and orangey amber colour, hazy. Perfumey, tempting aroma of orange, pineapple, ripe peach, amaretto, flowery hops, spiciness, whisky; very vividly fruity taste, almost like fresh orange juice, quickly becoming yeasty, spicy and malty, honeyish, slick and creamy mouthfeel, dry finish with floral, aromatic hops and lots of booze, but fortunately not becoming wry, long and satisfying. The older version of 8,1% ABV, made with Rodenbach yeast and basically a blend of old Boskeun beers, was better still, more balanced and less alcoholic. Has a great ageing potential, I hartily recommend vertical tasting of several vintages. Which gives me an extra argument to state that this beer deserves to be classified as a barley wine rather than the somewhat meaningless ’Belgian strong ale’...

330ml bottle at Bistro L’Autre Oeil. Cloudy golden with a frothy white head. Flavors are dough, honey, vanilla, barley sugar, grapes, apricot and citrus with herbal and spicy notes. Medium to full body, moderate carbonation, creamy texture.

Couleur ambrée un peu trouble, mousse qui disparait. Nez fort miel, levures, nonettes, fruits noirs. Gout sucré, miel, fruits noirs, fruits secs,malt, épices , notes houblonnées. Tout les gateaux et épices que l’on trouve traditionellemnt a noel mais trop sirupeuse et sucrée a mon gout.

a bit overrated. it’s a better than average ale, fairly standard for the bsa style. spice and fruit and alcohol in the nose. yeasty flavor, with plums and other fruits, with a sweet, dry yeasty finish. alcohol shows a little, but this is a good golden ale overall."

Golden brown and clumpy cloudy with a ringed white head. Nutty sweet, redcurrant raisiny and a buzzing candy sugar that leads into the initial taste. Neat bitterness throughout but there’s a cakey creaminess. Carbonation is clean and oily. Fading sweetness on the finish and a classy sealed bitteriness.
