The color of this beer points out the old wines of Burgundy with their red tile with a light foam collar. With the nose, the ASBC surprises, because one finds there a range of very astonishing flavours, spices (grooves, wooded), of the brandy odors, ripe fruit and point liquorice and vegetable dry. In mouth, it is necessary to take more time than a beer of conventional tasting: one starts with velvety, raised of light carbonic giving a little nerve, to arrive on a light acidity of the vinous notes and a very low bitterness. The ASBC strikes by its length in mouth and its Port side. It is appropriate well for example for a steaklet of duck or foie gras stove thawed with the vinegar of Modena or for a bitter chocolate.

UPDATED: JUN 24, 2012 Bottle #276. 750ml. $26.99 at Premier Gourmet, Buffalo. I’ve been sitting on this bottle a long while now, I hope it’s been worth it. Pours a deep amber with little to no head. Aromas of sour fruit, some funk, very pleasant. The taste is much more sour than I had imagined it would be - this is almost a lambic level sourness. Very tart. Deep and complex. Very little carbonation, and I can’t detect any alcohol... 11%??? Smooth, sour, funky fruit balanced out with just a hint of sweetness. This is an amazing beer, and one for the ages.

Pours a dark murky reddish brown color. Aromas of dark fruit, yeast, vinegar, and a touch of wood. Flavor is sour, yeasty, wood, with a tart sour finish.

>>> A complex and vinous high abv sour in the mold of the Saint-Bon-Chien series that seems to have held up time pretty well, but showing some signs of being old.

- Murky orange with a small beige head and little to no lacing.
- Oxidation is definitely showing up a bit - and not only the on purpose oxidation BFM style - , especially in the nose. There’s also mild but unfortunate traces of acetone.
- Taste is noticeably better with the good acidity preserving the flavors (caramel, red fruits, oak, moderate spiciness) pretty well.
- It’s a bit boozy, but that is to be expected from an 11% abv beer.
- Like most Saint-Bon-Chien, it’s a quite complex beer with multiple layers of complexity.
- Body is medium, carbonation is moderate and finish is really oaky and visnous. The barrel-aging effects gives this beer a rather unique profile.

Flavors: Caramel, red fruits (raspberries, berries), red wine, brandy, oak, vinegar, moderate spiciness and vanilla.

Bottle shared by tom10101, thanks man! Pours a hazy red with a white rim that leaves some lacing. Nose is of raspberries and wine. Taste is of raspberries, wine and some light vinegar but it’s all well integrated here. Definitely vinous with a moderate carbonation and a medium body. Overall a really nice ASBC, I must say that this aged incredibly well and I’m now considering aging some myself!

pours hazy mahogany with an off-white cap, little retention. leathery stone fruits, acetone, spicy glue-wine, red grapes, raspberries, grappa eau-de-vie; woodsy vanilla, light to medium - tingling acidity; spices. light carbonation, medium body - oily; boozy, sweetish and spicy finish. nice but not more than that.

Many thanks to Roman for sharing! Sourish-woody, red fruit, intense red-wine like maltiness. Nearly no bitterness, sourish-winey woody fresh, deep with red berries on a nice woody sour body. Nice!

Appearance was clear red honey caramel with creamy tiny white head, no lacing. Aromas are sweet slight caramel, floral spicey hops, cherry, maple, apple, straw with acidic tartness. Taste are mild grape of chardonnay, cherry, hints of maple, sourness of the yeasts.

Bottle, 7 years old now, 6 since blending.
Appearance: A short head quickly fizzes into a murky chestnut/reddish body.
Aroma: Aroma has some astringency, but sour cherries and oak are noted. There’s a hint of sweetness through it, not enough to consider it balanced, but it adds a layer of complexity.
Taste: Ah this isn’t very drinkable at this age. The intro is promising, even if a little flat. It leads to a slightly sweet gummy cherry mid-taste. The back-end gets hit with vinegar and then an aspirin/chemical flavor. This simply hasn’t held up to age. It’s not undrinkable, but it’s certainly not very enjoyable.
Palate: Medium bodied, a bit flat tasting.
Overall: I recommend not purchasing one of these unless it was properly cellared, which this wasn’t. Perhaps it would have aged nicely in a good cellar, but on the shelf it hasn’t held up. Not a drain pour, but not something I want to continue drinking.

Rusty brown with virtually no head. Aroma is malt vinegar, overripe red fruits, hint of nail polish. Medium bodied, tart on the palate, long acetic finish. Taste is malt vinegar, dates, red wine.

Bottle sample at Muckfest V on 7/12/14. Clear amber in color with a thin beige head. Aroma of sourness, tart fruit and a bit of nail polish remover. Sour fruit flavor with some caramel maltiness before a sour finish.
