"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Wow, something finally good coming out of illinois. Pours a deep 10-40w. Very nice bourbon aroma. From someone who loves bourbon this excells. Sweet chocolate notes abound also in the aroma. huge alcohol presense but it dies down over a period of time on the palate. A great sipping beer, hopefully i can find a great madero cigar to go with it. Thanks sun devil liquor.

12oz bottle courtesy of CHI tasting crew 2013, shared @Tristate Tasting II, Freiburg. 2013 edition if I remember correctly. - Vanilla and dark chocolate fig compote perfectly contained by suave, near-leathery bourbon barrel tannins and make for very easy sipping. Lush dried berry aromas and dried toffee escape from the contained velvet creamy dark mass of all-encompassing vanilla bourbon as it warms. Late gentle hops join in the sweet butterscotch finish to round off this elegant, yet nearly mono-purpose dessert treat. #1600

12 oz bottle. Tasted on 8/7/14. Beer from my brother In law Chae thanks!!! Vintage 2009. The beer pours to a rich deep black color with almost no head. The aroma is overpowering with bourbon with slight coco & licorice. The taste is very rich & extremely complex. You get the bourbon on the front end followed by a rich chocolate & dark fruits finish. You really have sip on this one to enjoy it. ---Rated via Beer Buddy for iPhone

Bottle pour, 2013 vintage, black body with a ring of espresso colored foam. Aroma is raisin, dried plum, cherry, molasses, vanilla, bourbon. Taste is plum, raisin, cherry, BIG vanilla (but not that fake burnt flavor, good, rich, oaky), bourbon, molasses, black coffee, black malt. Palate is rich, but not syrupy, carbonation subdued. Warming, but not boozy, sweet initially, but the bitter finish is nearly perfect contrast. Just ever so slightly too sweet to be perfect.

Pours black. Aroma is bourbon, chocolate, coffee, oak, and vanilla. Taste follows the nose with a wonderfully long and lingering aftertaste.

shared@2nd D/F/CH TriStateTasting, courtesy of bartlebier, thank you! aromas of oak barrels, dried plums, chocolate; taste with components of melted dark chocolate, raisins, bourbon, with a distinct finish of coffee and malt-coffee notes. Alcohol very well hidden. Wonderful!

UPDATED: JUL 26, 2014 Bottle 33cl @2ndTSRB, a dark beer with low head. Nose is on dark chocolate, oxidised, fig and prune, very nice. Aroma is very nice on dark chocolate, fig, sweet candied prune, round caramel, vinous, oak, vanilla, tannic, creamy, very complex, licorice. Exceptional brew, delicious, very long aftertaste on dark chocolate and fig notes, the kind of beer I like most.

Bottle 2013 vintage. Pours a dark black with receding dark brown head. Aroma is intense bourbon characteristics such as vanilla, wood and coconut. Some dark chocolate and tobacco, bourbon, vanilla. Taste is huge: dark chocolate, ashy, tobacco. Very rich and mouthcoating. Reconforting alcohol burn.Truly, a classic.

Enjoying this brew in honor of my lovely girlfriend's birthday, this barrel aged stout is absolutely delicious, exceeding my already high expectations. This was a random gift from a friend of a friend, and am I thankful to have tried this! 2013 vintage bottle pours a ridiculous dark black color with some dark tan head, looks like liquid dark chocolate. Aroma likewise is of chocolate but also vanilla, red fruit, and of course bourbon whiskey. Taste is amazing, fresh dark chocolate, oak, roasted malt. Finishes with a sweet caramel/toffee, almost like I took a bite out of a chocolate bar. Also bourbon accents like I just took a shot of Jack Daniels too. Just awesome, the only subtraction is for the boozy/alcohol bite that I would rather not have, but it's not overpowering. Oh and the mouthfeel/texture is perfectly full-bodied, smooth, and rich. I'll never be a stout fan but this is among the greatest beers I've ever tasted! If I ever find it again I'll be sure to buy and keep in stock for special occasions! Great dessert beer too.
