"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Two or three years ago, when you could actually find this in four packs and bombers on the shelf at some stores, I was not yet at BBA anything in my beer geekery. Ah to be cracking one of those now, with a little age on it.... Instead, I’ve not been able to find any until the 2011 release. I had to put my nose to my snifter several times to confirm all of the aromas it is pulling. It found caramel, chocolate, chocolate, coffee, toast, resin, butterscotch, licorice, soy sauce, vanilla, and woody notes. The ale pours as deep as brown can be without actually being black, with a decent brown head that fades to a slight ring quickly. A sip reveals medium sweetness that turns into slight bitterness and lingering umami as it rolls across my tongue. Its body is full with a thick, creamy, and sticky texture. The carbonation is very soft, but serves this ale well by gently pushing over your tongue. One of the finest beers I have ever had.

Bottle in Amsterdam. Dark brown body with slight, tan head. Nose is chocolate, vanilla, alcy, coffee. Taste is whiskey, and bourbon and chocolate. Super nice. Bitter and delectable in the finish.

Flaska från 2011 på Monks Café, Stockholm. Mycket god doft av bourbon, vanilj, choklad. Smak av detsamma med en värmande alkohol och sötma. Väldigt smakrik, runda, integrerade smaker. Mycket god!

Bottle 0.355l at The 8th Belgrade tasting Session Two at Alberto place in Pozarevac.18.07.2015.Thanks luttonm for this bottle.Hvala Matt for this 2014 bottle.Pour it really thick dark color with small head.Aroma bourbon and vanilla.Taste liquorice, dark chocolate, caramel, vanilla, wodden note, bourbon also present, Wau what a complete balanced beer.Really it’s amazing.I liked it so much.

It is fruity as barley, smoked like a campfire, smells of wood. Coffee that is freshly milled and vinous warming alcohol with clear touch of American bourbon. It fills the mouth with a creamy and thick feeling to follow. Clear notes of smoke, strong vinous character with grapes and raisins, light delicate coffee notes as meet with dark bitter chocolate of the highest quality. It all seems almost too composed and well-founded, but in the aftertaste will find its ferocity in the form of untamed American bourbon that leaves alcohol warming effect down through the throat. The 13% alcohol is well hidden in the aforementioned tasting notes, and the overall impression is a soft, round, tasteful and warm stout as I can safely recommend to anyone. It tastes just too good.

BCBS 2012 on tap at Binny’s Lincoln Park tasting room. Flavor is rich and bourbonny, but with a clean finish. Very nice compex brew. I know I’m late to the party here but this beer is one of the few really hyped beers that I feel actually met its expectations.

2014, bottle. Pitch black, small brown head around the edges. Aroma is a massive amount of vanilla, hint of black chocolate, some oak. Fantastic aroma. Big and creamy mouthfeel, somewhat sticky, sweet, again some vanilla, nice lingering bourbon but not too much. Outstanding and worth the wait.

On tap at Binnys tasting room for this review... But have had countless bottles previously. Pour is dark and bold. The nose is... Sweet sweet fudge. I let it sit for a few before sipping. Notes of bourbon and chocolate dominate this behemoth. This is my goto barrel aged stout.

2012 - This is definitely tasting great now, no wonder why so many FIBs are trying to trade for it. Probably only another year or two before it peaks.
