COMMERCIAL DESCRIPTION
Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no furit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Sour, cherries, figs, raisins, toffee. It has a dry, vinuous character, should age superbly, and the barrel character is quite apparent, slight notes of vanilla, oak, earth. Quite acidic and a lingering sour finish. This one sticks with you.

Bottle pour from batch 3x4, muddy red color with a very thin beige head. Vinous oak in the nose with some grape/berry and funky mustiness. Taste is tart and sour with the vinous oak and berries and hints of malt and a little dark fruit. Very very good, I sat on this awhile and it was worth it! Would definitely put this in my top 10!

Deliziosa Sour Ale invecchiata in botti di Cabernet Sauvignon, non a caso vincitrice di tante medaglie nella sua categoria, eleganti le note vinose, e frutti rossi, carbonatazione perfetta ed equilibrio totale per una birra acida fuori dai soliti schemi. P.s. inimitabile....

Bottle at James’ place. Pours reddish brown with a thin off white head. Funky yeasty aroma with light sweet fruity notes. The flavor is earthy and funky with some tart fruity notes and a nice earthy finish. Good stuff.

I had this bottle in my cellar for about 5 years. Pours dark red with no head. Aroma is sour with cherries and wood. Flavor is similiar and very tart and has some wine characteristics. Fruity with a bit a vinegar. Lively carbonation and ABV is undetecable. Not my favorite style but very easy to drink.

Pours dark copper with no head. Aroma is deep ripe berries, nice brett, sweet cherries, sour berries, currants, vinous, a little lacto acid, fresh vanilla, nice barrel, a little bit of fruity tobacco and some apples. Taste is nice ripe fruits, sour currants, dry wood, dark oak, brown aleish notes behind, apples, a bit of vanilla here too, pretty tart in general, nice brett and a bit of lacto acid. Pretty dang nice to enjoy outside on a sunny eve!

375 of awesomeness. Pours a reddish brown, only slightly hazed. 1 finger head that doesn’t stay long. Aromas of red wine and oak and so much more. Taste is tart with the oak and red wine notes, slight vinegar aroma. Overall another very tasty sour one of the best I’ve had.

Pour is brown in color,clean and clear. Aroma is sour and fruity. This beer is very sour but the like a sour candy you can’t put down. You can taste the cab flavor if you now what you are looking for.

From the bottle. I get woody notes from the oak with some sour/dried fruit character on the nose Good levels of sourness with some dried fruit on the finish. Well rounded overall.

Tasting at Mes and Sims flat. Batch 2. Very dark brown beer, hazy. Dry palate. Sour and rich. Sour coca cola and currants. The dark fruit providing a reasonable counter balance to the lemony sourness.

Sampled from bottle. Poured a slightly cloudy brown color with an off-white head. Aroma was dark, dried fruits with a tart kick to it. Flavor is tart, slight puckering sour. Wine notes, grape crispness. Carbonated pretty well so a bit of a fuzzy note to it. Good.
