375ml bottle at DHVL as part of my Pre-Wedding Celebrations. It pours golden yellow, with a fluffy white head. The nose is floral (esp. chamomile), tart lemon, white grapefruit, wood and some vinous notes. The taste is grass, floral, wood, lemon, white currant, tart white grape, sweet gooseberry and hay, with a long dry-tart finish. Good sweet-sour balance. Medium body and lively carbonation. There’s no denying it’s a quality beer, but I don’t think it’s significantly better than the classic Cantillon gueuze.

Sampled at STLWill’s 30th b-day tasting. This one was a real treat. Pours clear gold with a light white head. The aroma is powdery and floral and fairly sweet by Cantillon standards. There is some sourness and hints of wood and mild vanilla. Light crisp body that’s very refreshing with a moderate amount of sharp carbonation. The flavor starts with sweetness from the barrels used with balances sharp citric/lactic sourness and there is a vanilla flavor that stays throughout. The finish adds some pepperiness and more citric acid. Great lambic.

750 ml bottle sampled at STLWill’s 30th birthday party- thanks, Will! Bottled 10/23/2008. Pours a hazy, dull old gold color (once again, this is one I tried pretty much the last tasting of, so it was murkier than for others) with a small white head. Aroma of lemon, oak, basement funk, vanilla, and yogurt. Flavor of lemon, oaky funk, acidic vinegar, grapes- the lemon really leads the way, though. Dry finish. Medium-bodied, with low carbonation and a fairly smooth palate for the style. Still pretty tart, though. Very good.

UPDATED: JAN 9, 2012 31/12/2011 75cl bottle @ De Heeren van Liedekercke - bottled: 26/06/2008 (2011-744)

Little cloudy dark blond beer, aery white head, unstable, falls down to a small layer. Aroma: very soft bretta, peppery, some citrus touches, bit dusty, traces of paint. MF: soft carbon, medium to full body. Taste: a little bitter first, fruity notes, grapefruit, lemon, yellow summer fruit (nectarines), sour green apples. Aftertaste: unripe nectarines, soft tartness and a little bitter.

Thanks to ericandersnavy for sharing this bottle. Really excited to try this one. Dated 2008 on the label. The beer pours a yellow color with a white head. The aroma is full of the classic Cantillon funk with some yeast, wheat and lemony notes. There is also a little bit of wet wood mixed in to the aroma, which smells amazing. The flavor is a little more complex than the aroma. I get a lot of tart wheat and lemon notes, with some really nice funk and some oaked notes. There is also a little bit of apple notes as well as some nice sour notes. The sour and funk notes are not overpowering and are very well done. The beer is extremely easy to drink and very enjoyable. The carbonation is absolutely perfect and the mouthfeel and about medium and very smooth.

Bottle thanks to ericandersnavy. Pours a hazy yellow with fizzy white head. Aroma seems to have a very balanced notes of funk and acidic tartness with lemon, farmhouse and musty. Flavor is dry and very much the same as aroma, very tart and very pleasant. Mouthfeel is light body, very smooth with soft, fizzy carbonation. Excellent brew!
