Bottle, bought @ Salling, Aarhus. Deep brown, bordering on black. Firm, creamy off-white head. Aroma has plums, chocolate, quite nutty, some peanut, soft cocoa, mild spicy. Medium carbonation, fine creamy mouthfeel. Flavour has caramel, sugar, soft viniousness, plums, quite a bit of chocolate. Over ripe red apples. Light malty bitterness. A very fine first attempt.

Pours dark cola with some limited head and minimal lacing. Nose is fruity and syrup. Flavours of syrup, plums, maybe some grapes, brown bread. Taste is med/big sweet, medium/light bitter. Full almost oily body with medium carbonation. Alcohol is present but not overwhelming.

Foam is very nice and full, but decreases over time for a light layer of foam that seem to last forever. The aroma is mostly of a roasted malt. The taste is very delicate and composed of so many ingredients to the taste buds at the beginning can not even keep up. After some getting used to I discover a delicate chocolate malt toffee in the background. My favorite coffee is Wiener Melange (mild coffee with cream and cocoa), and it is precisely the symphony of flavor notes I also find in Gregorius. A lighter roasted malt flavor is felt along with a hop bitterness just balances the so nice to malt ago remains the beer’s main theme. The slightly sharp flavor that greets me at the end may be partly yeast merit, but I’m leaning towards the view that alcohol is high value becomes a little play here. I am basically very excited about Gregory, but several of the other Trappist Bier think I carry on more authenticity and genuineness.

UPDATED: SEP 28, 2015 It pours a dark, reddish brown, with a thickness like good juice. The foam is decent, but quickly fades to nothing. The aroma is dominated by malt, but also very fruity notes. The taste is also dominated by a heavy play between malts and fruit, like blackberries. A note of alcohol is there, but very subtle. It just adds to the rich, full body. Hell of a good beer, but so heavy I?ll save the other three for special occasions. Bottle ordered directly from Stift Engelszell.

LCBO bottle. BB 21.01.2017. Pours a deep muddy brown with tan head, doesn’t last too long. Nose is molasses, brown sugar, figs, chocolate. Nice soft carbonation, thick body, Taste is a medley of dark fruit, grain, honey, cherry and chocolate and I’m picking up some bubblegum notes. This is right up there with the great Belgian quads.

Poured a deep reddish brown with a puffy offwhite head and solid lacing. Lizardville. The aroma is dark candied sugars, plums, prunes, sweet rolls, Belgian yeasts, and caramel malts. The taste is toffee, caramel malts, plums, sweet raisins, Belgian yeasts, and candied sugars. Medium body, slick. Spicy and flavorful finish.

Bottle from the LCBO. I wanted something special for my 3000th rating here on RB, and I figured a new Trappist ale with a name very close to mine was a good choice. The only problem is that I’m no longer as much of a fan of Abts & Quads as I once was, so in terms of style, I probably could’ve made a better choice for this milestone. But that being said, this is still a very good beer. The dark mahogany body has a nice ruby glow around the edges; the aroma is rich and complex, with notes of dark cherry, rum-soaked prunes, dark brown sugar, salted licorice, and burnt toffee; flavours of dried dark fruit, cherry brandy, cloves, brűléed sugar, and a touch of maple; and a finish that is warm but not nearly as boozy as I expected given the 10.5% abv. All in all, while there are other beers in my stash that I’ll undoubtedly enjoy more, I certainly don’t regret selecting Gregorius for this occasion. Now, let’s see what I song I get...
