UPDATED: FEB 29, 2012 Pours a clear, but unfiltered, straw yellow with a nice creamy, white head. Nose is light pineapple, coconut, and soft yeasty sake. Flavor pulls it all together fully and beautifully. The ginger provides a nice zing to go with the tart body, while the chamomile smooths everything out for a silky floral finish. This is innovative, gorgeous, and refreshing (in more than one sense of the word).

Aroma: lactobacillus funk, sour apple, ginger, herbal, a slight dustiness
Appearance: clear gold with white head
Taste: sour apple, dusty, earthy, herbal, grainy malts
Palate: light and dry, a very refreshing beer
Overall: this is one of my favorite beers, reminds me of a Berliner Weisse, easy drinking, great firm tartness, I will defiantly have this again

Bottle:   Twas a bright straw until I got to the bottom of the bottle, now its all cloudy and stuff.  
Moderate white head, nice lacing.   Wonderful floral nose, very nice.   Reminds me a bit of Cuvee des Fleurs.
  A bit spicy on the tongue, floral, peppery, with a bit of barnish funk that is very faint.   Soft on the
tongue, not very bubley, washes away quickly and is very clean.   This would be a great summer sipper, crisp,
clean exit, wanting me to sip more to bring back that flavor when it first hits the tongue.   Feels a little flat,
but I think it actually makes it easier to drink.   A bit of floral lingers, very soft.   Overall I would say
floral, somewhat like a Saison, but has some light corriander and pepper that I sometimes get in Witbiers.  
Interesting mix, and one that I would certainly have again.   Nice!

650ml bottle pours a golden-orange color with a big white head that settles with some nice lacing. Aroma is ginger and earthy notes. Taste is predominantly sour and ginger with a bit of hop bitterness in the finish. A very unique and interesting beer.

Really enjoyed this one! Hazy yellowish pour with a big head. Big up to the nose filled aroma of ginger! Love me some ginger in a beer. Flavor is fairly mainly light candied gingerish, with hints of the chamomile towards and through the finish. With the ginger involved, I was having a hard time picking up the rice, but you can definitely tell there is no wheat in something that tastes mildly like it should. Good drinking here! Wish I had one right now in this 100 degree heat!

July 18, 2010. 22oz bottle shared by jerc & mabel with me and blankboy. Hazy yellow/orange with an average fizzy off-white head. Odd aroma - herbal, floral - softly pungent, like it’s holding its breath - a bit spicy and vaguely fruity (I guess all that is a consequence of brewing with chamomile and ginger at the same time?). The taste was quite different - still somewhat bitter, but mostly ginger, pungent floral bitterness and, weirdly, apricots. Soft, still, spicy mouthfeel, quite thick and almost cloying - weird for sure .... not sure I really want chamomile in my beer.

22 oz. bottle from Malt and Vine. This has a hazy yellow/orange appearance. It has a nice fluffy head, at first, but it eventually fades away. Wow, this has a sharp, dry ginger aroma to it. The ginger is quite pungent. Almost a bit medicinal, considering the intense ginger aroma. The ginger is very good, and adds to the flavor quite well. In fact, the ginger is what makes the flavor. The ginger sharpens into a nice bitterness that lasts. This beer is great and I love the approach. Just know that when you have this, you’re going to have an intense ginger experience. It’s quite one-dimensional, but in a solid and good way.

12 ounce bottle. A odd brew. Pours a cloudy orange with a medium white head. A very sour nose, some light lemons and malt. The flavor is dominated by an odd dry sourness, lemons, camomile, almost like a lemonade tea mix, is this supposed to be so sour? Not too bad, just odd.

Bottle to taster. At Levi’s. From notes. Not a huge fan of this one. Pours a hazy lemon color, with a bone white diminishing head with minimal lacing. Aroma is full of ginger, some spice, and lemongrass as well. Taste is somewhat off putting, more lemongrass, ginger, some odd medicinal quality. Quite syrupy.
