Aroma: The aroma is brett yeast, barnyard., tart apple, citrus/lemon, spice, and hay/grass
Appearance: It pours a clear golden color with a thin white head with scattered lace
Flavor: The taste is much the same, lead by the funk, with spice, fruit, and grassy flavors as well
Palate: The body is light-medium, it has a soft carbonation, and a clean mouthfeel
Interestingly, I felt like the brett flavors became slightly more muted as it warms, and the underlying sweetness comes out a bit more, but I like both the cooler and warmer version of this beer. Regardless, the combination really does work nicely. Good stuff.

Bottle from the 2nd release shared with some buds. Aroma is sour wine, great big barnyard funk, white grape juice, and a stilton chesse. Pours golden with very little head but ok carbonation. Taste is sour white grape, barnyard, slight pineapple tartness, and a mild stinky cheese. All in all, this is too sweet and strong. Really takes away from a fantastic flavor profile. Well worth drinking.

Release #3, 9.3% ABV. Bottled November 19, 2013.
Appearance: The body is clear and golden, showing off sparkling carbonation. The head is short and foamy, quickly dissipating to a light coating and a short ring.
Aroma: Very powerful aroma, it jumped from the glass as I poured it exposing a very fruity and slightly tart smelling aroma. Upon settling for a moment there’s a complex blend of oak, hay, leather, tart lemon, tart cherries, papaya, and funky barnyard earthiness. Very enjoyable.
Taste: The intro is of mildly sweet wine, honeysuckle and light oak. This leads to a big fruitiness that reminds me a lot of papaya with strawberry tones. The finish becomes a bit tannin present with a sort of astringent quality I find in some wines that comes off a bit like booze. Mild funk is noticed throughout, but mostly present towards the finish. The finish is dry and lingers of oak for a bit.
Palate: Light and crisp, sort of juice body.
Overall: This is a great beer, I love the complexities in it and I’ve never had a beer that had a combination of papaya and honey flavors. I look forward to trying this next release!

22 ounce bottle into tulip glass; Release #1, bottled 1/23/2012. Pours lightly hazy/cloudy bright golden amber color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Dense spotty soapy lacing clings on the glass, with a ton of streaming carbonation retaining the head. Aromas of big peach, pineapple, pear, apple, lemon zest, floral, hay, grass, white wine, oak, clove, pepper, musty funk, herbal, and yeast earthiness. Fantastic aromas with great complexity and balance of brett, yeast, and wine barrel notes; with great strength. Taste of big pineapple, peach, pear, apple, white wine, lemon zest, oak, clove, pepper, hay, floral, grass, musty funk, light honey, herbal, and yeast earthiness. Light earthy tartness on the finish; with lingering notes of pineapple, peach, pear, apple, white wine, lemon zest, oak, clove, hay, grass, light honey, herbal, and yeast earthiness on the finish for a good bit. Damn nice complexity and balance of brett, yeast, wine barrel, and light malt flavors; with a crisp malt/spiciness balance and zero cloying flavors after the finish. High carbonation and medium bodied; with a very smooth, crisp, and moderately prickly mouthfeel that is great. Alcohol is very well hidden with only a light warming present after the finish. Overall this is an awesome Brett saison! All around great complexity and balance of brett, yeast, and wine barrel flavors; and very smooth and crisp to sip on for the ABV. A highly enjoyable offering.

22oz 3rd release 9.3% bottle purchased at Crossroads. Poured a watery deep bronze body with a large fluffy white head. Aroma is FUNK-e, notes of band aid, lemons, brett, dough, hay, straw, lemons, tart cherry. Body is thinner and light with stronger carbonation and a dry finish with a funky finish. Flavor is dry overall, some crusts, lemons, brett, funk, dry bread. Aroma is the best part of this beer but this is still a nice beer.

Tap at Denver Tap room - new batch, 9.3% - clear light gold - surprisingly light, clean, and crisp for something so strong - mildly phenolic brett funkiness up front, followed by moderate peach sweetness, finishing with strong, medium-dry white wine and a tingly acidity - nicely done.

As I pop the cap the beer slowly tries to creep its way up and out of the bottle before I have a chance to pour it in my glass. As I pour the orange and straw hued nectar into my glass, a steady stream of bubbles races from the bottom to the top, regaling my nose of good things to come. A huge cloud white head slowly fades into a thick white blanket. Swirls creamy.
Bam! Sour lemon and white grapefruit and Pinot Grigio. Sparkling and bright. Homemade unadulterated lemon bars. Kiwi and agave nectar in the middle. Chardonnay grapes and raw white oak barrels. Sourdough breads to soak it all up. Italian and French bread crusts along the edges.
Creamy, delicate, and sophisticated. Soft oak and sourdough and French rolls mingle harmoniously in the middle while soaking up tart zesty lemon and grapefruit before rolling into guava and kiwi. The mouthfeel is redolent of the finest angel food cake. Pinot Grigio and New Zealand Sauvignon Blanc. Vidalia onions? Lovely lace marks my glass. Green banana peel, chamois, and spice in my breath. Watching over the proceedings are Chardonnay grapes and just a hint of oak.
An epic beer from Epic Brewing out of Salt Lake City, Utah, I just wish I had more. The brilliant mastery of Brettanomyces in this beer is thanks to the collaborative efforts of the brewmasters from Epic Brewing and Crooked Stave Artisan Brewing. Fabulous. Divine.

Bottle, 22oz. 9.5% ABV. A dense, white head forms over a hazy golden body with microfloaties. The aroma is quite citrusy and lightly bretty, disappointingly simple, but nice anyway. Some faint malty hints as well. It’s medium bodied, quite dry and with a nice carbonation level. Citrus, elderflower and some maltyness in the flavor. Some bitterness chiming in towards the finish. Overall, easy drinkable and quite tasteful, but lacking complexity and depth. Refreshing. 131123
