This seasonal Saison is brewed with fresh herbs. The first whiff is that of a festive array of rosemary, thyme with a dominating profile leaning towards sage. This beautifully crafted farmhouse style Belgian beer is warm with herbal notes and backed with earthy hops.

Bottle from release #3. Pours with a light haze and voracious carbonation. Medium golden-yellow hued body. Very large and lasting white head that leaves great lace. Aromas are strongly herbal and spicy. Slightly green aroma. Sage and coriander. Peppery, phenolic, very spicy and herbaceous, tobacco, light lemon zest, peppery. Medium pear esters, light tropical fruit/mango. Dry finish. Flavors are oddly tropical, lemon verbena, sage, rosemary, pineapple, peppery, lavender, coriander, pepper, mango and passionfruit. Lightly earthy hop character. Low malt and low sweetness, but some perceived sweetness from the esters. Very tasty. Lots of green sage and herbaceous qualities in the finish. Lively bubbles, medium to low bodied, dry, lightly warming. Spice prominent, but completely within reason. A pleasure to drink.

Hazy pale amber. Big sage aroma...dominating. Sweet front, dry finish, lots of sage, malts are a bit sticky, dash of fruitiness. That’s a nice sage beer.

Sage adds real character here, soft spiciness on top of a well bodied saison. Spiciness turns minty on the finish. Sage blends perfectly with saison throughout. Nice beer.

Bottle from Sam’s Quik Shop. Pours golden with a thin white head. Has some nice lacing. Massive herbs and grass notes on the nose. Has some solid funkiness and hop notes on the nose. Finishes clean. Very nice.

Bomber. Cloudy yellow with a single finger of white head. The sage shows on smell, along with thyme (or rosemary?) and lots of Belgium yeastiness. Earthy. Complex, but not over done. Taste is equally herbal. Tangy. The year does a good job of pulling this beer to the center; not too bitter from the spices. Enjoyed.

650 ml. Lightly hazy golden with a sticky quarter inch of lasting meringue on top. Grape must, earthy peppery spice and honey on the nose. Taste identifies the peppery earthy spice as sage, but doesn’t overwhelm. There’s enough cheesy funk, white wine grape must, peach and lemon-honey hard candy to balance from several directions. Some wheaty tropical bubblegum in the long finish. Medium body has high carbonation that sometimes gets a bit out of control, but it’s a necessary evil in this style. Nice balance that overall leans to the dry side.

10 oz at the brewery. Pours hazy gold with a tall white head and spotty lacing. This is one of Epic’s most balanced Belgian offerings. The aroma is dry and yeasty without being overdone. Sage is there to make it savory but it doesn’t become strong. The palate is pretty full. Nice complex flavor with cloves, assorted fruit and peppers. The sage is perfectly done. It adds a great dimension to the spicy profile. The finish is clean and dry.

Bottle. This is a really neat beer. There is a lot that comes through in the palate and the aroma. It pours a pale cloudy yellow, thin white head, and dissipating lacing. The aroma is full of spice – rosemary, thyme, and sage. I love the finish of the palate. It tingles up front and then disappears cleanly and beautifully but on the roof there is a lasting hint of all this beer offers. Best part is there is some funk to this beer, which I adore!

Somewhat cloudy straw colored beer with a ridiculously foamy white head (careful with your pour). Spicy nose with musty herbs, tangy spice, and some lemon peel. Flavor is also a bit sour initially which then gives way to an unusual earthy flavor that I guess is the sage, but is a bit obscure, yet pleasant overall. This is then complimented by a mild bitterness. Throughout these layers of flavor the sour yeasty lemon flavor persists. Refreshing beer with some unique qualities.

Semi clear golden pour with really nice bright white head and sticky lacing. Extremely nice and refreshing. Great herbal sagey aroma. The bitterness of the safe though is just a little on the harsh side on the flavor. A bit unusual, but honestly, a really nice change up. Pretty cool.

Firkin at Bailey’s Taproom. Hazy medium straw color. Light delicious fruity nose, with hint of herbs. Fruity, floral opening, sage comes out strongly in mid palate, finish is quite mild, a sort of wild child. Thin body. Pleasant but doesn’t have a lot of saison character.
