Pours a light golden with some very bubbly, effervescent white head. Nose is really funky and musty. Flavor is much the same, with some apple tartness, some yeasty notes. Why can’t all cider be this complex and intersting?

750ml. Bottle $7.99 Sam’s Downers Grove One of my first ciders from an actual cidery. Pours a slightly hazed apple juice golden. A quick rising white head that fell just as fast. Looks good. Smells musty upfront. As the cider warms the mustiness falls to the background and green apple comes to the front. Very good. Green apple really becomes present as the cider breathes. Starts off with that barnyard mustiness that’s found in saisons and is quickly overtaken by green apple skin. A good thirst quenching wateriness on the finish. Not as dry as I thought it was going to be. A nice surprise. Light body with a refreshing crispness. Eventually dries out. Easy drinker. I could sit and enjoy this all day. A wonderful cider that would pair well with earthy cheeses. An excellent cider that I’m looking forward to trying other samples from this cidery if I can find them. 4/8/07

Bottle @ redlight redlight. Pours hazy golden with a fizzy white head that fades to the edges quickly. Apples in many modes, a tart green apple along with a more caramel apple undernote, a little yeasty spice and some musty notes. Tart, apples, sweet, a little drying tannic note, and finishes a little musty. Nicely carbonated.

On tap at Rich O’s. 2005 vintage. hazy orange apple juice color. nice balanced mix of bright clean sour apple jolly rancher and horse blanket. sweet slightly tart apple flavor with a bit of horse blanket. tart medium dry apple finish with a bit of horse blanket. light to medium body. interesting subtle but lively almost fizzy carbonation...very nice. very nice.

2001 Vintage: Dark yellow with just the slightest haze. Musty (decaying wood/forest floor) aroma with just the lightest apple aroma at first. Mellow woody aroma dances about the cheeks and gums as you put this thing in your mouth. Starts sweet finishing with a just the slightest hint of smoke and red/green apple. The lingering apple actually seems to get stronger after the swallow. Leaves my mouth feeling clean. Fascinating stuff!

Cloudy living appearance. Aromas of cider mills and an earthy smoke. Subtle latex. Flavour of fresh off the mill cider, slight lemon puckering. Very refreshing.

2003 Vintage. I haven’t tasted quality cider in awhile, and one should expect good things from the makers of Calvados. I was not disappointed. I think the last quality apple product I enjoyed was New Glarus Apple Ale, and this reminded me of its more refined sibling. Some nice tartness and sweetness together. The acidity somewhat takes me aback. I prefered this much more as it warmed to about room temperature, I’m not sure why RB would recommend serving this one at 46.5, which was far too cold to enjoy the nuances of the flavors. Although not a huge cider drinker, this one was one of the better ones I’ve tasted. If I were rating according to style, this would be close to a 5.0

2005 vintage. Pours fairly dark orange for a cider. Aroma is mostly apple (go figure) with maybe a bit of vanilla or cinnamon. Body is tending towards full for a cider with mostly sweet apple flavors. Some good acid gives good balance, decent carbonation makes it drinkable. Very tasty.
