Aroma is dry, apples, and a rich oak, maybe some ceder as well. Taste begins with sweet apples, quickly moves into a more dark, oaky, almost smokey flavor. Yes, certainly a smoke tinge. Aroma is almost mulled -- a spiced apple character with some nutmeg and/or cinnamon in it. You can smell pectin, too (mildly plasticy). Lovely, gentle, mildly sweet (but not very) apple cider flavor. Finishes with a bit of spice that lingers into a slighly plasticy aftertaste. I don't get any gueuze qualities at all, except maybe in the aftertaste. Aroma of tart and sweet apples, and a hint of vinegar. Flavor is initially a nice tart apple. The finish was a bit off and had an almost cloriseptic like flavor. Sweet apply aroma mixed with a very tart sourness and musty wood. Extremely effervescent pour leaves no head, only a golden body. Crisp medium-light body. A touch of strange barnyardy sourness, wood-tinged flavor with somewhat restrained appleness. Medium-strong vanilla with a touch of sugar, but not acidic or tart. Not really super dry, but nowhere near cloying. Aftertaste sees the apples return. Tasting is so dominated by and hidden behind the soft fizziness; it’s not harsh, like many Champagnes, but still has to be reckoned with. Just a pleasant, all-around classy drink, free of the often negative connotations of cider.
