Dec 5, 2005 2002 vintage. Pours a hazy pale golden, no head to speak of. Aroma is dry, apples, and a rich oak, maybe some ceder as well. Taste begins with sweet apples, quickly moves into a more dark, oaky, almost smokey flavor. Yes, certainly a smoke tinge. Finish is bitter, dry. Very light mouthfeel, but I find it appropriate. Very interesting stuff.

Aug 18, 2003 (2000) Slightly hazy with a deep gold apple juice color. Champagne bubbles keep rising. Aroma is almost mulled -- a spiced apple character with some nutmeg and/or cinnamon in it. You can smell pectin, too (mildly plasticy). Lovely, gentle, mildly sweet (but not very) apple cider flavor. Finishes with a bit of spice that lingers into a slighly plasticy aftertaste. I don't get any gueuze qualities at all, except maybe in the aftertaste. To me, it's gently sweet, decidedly apply, and not at all sour or tart. It's nice, but I still prefer beer.

Nov 11, 2004 Pours an orange tan with a huge head that fades quickly. Aroma of tart and sweet apples, and a hint of vinegar. Flavor is initially a nice tart apple. The finish was a bit off and had an almost cloriseptic like flavor. Very good up until the finish.

Jan 13, 2005 2002 Very fizzy yellow body with a lot of bubbles, champagne like for sure. The aroma is sour apples, light musty, some wood. The flavor is more apple sweet than sour. Extremely dry attenuated body. Fizzy. Interesting for sure.

Jan 30, 2006 2000 vintage. Explosive head on pour, lots of fine bubbles make up a head that disappears into the thinest coating. Sour aroma filled with funk and overly ripe apples. Light bubbly mouthfeel, reminiscent of champagne. Sour candy like taste, apples and aged wood.

Apr 28, 2008 Apple skins come off the nose right away, fresh apples with a slight mustiness. Pours cloudy golden yellow with a thick white head at first that dissappears quickly. Very carbonated, tart apples, granny smith-like flavors, apple skins with a musty funky finish that is slightly dry.

Nov 27, 2007 On tap at Rich O’s. 2005 vintage. hazy orange apple juice color. nice balanced mix of bright clean sour apple jolly rancher and horse blanket. sweet slightly tart apple flavor with a bit of horse blanket. tart medium dry apple finish with a bit of horse blanket. light to medium body. interesting subtle but lively almost fizzy carbonation...very nice. very nice.

Jul 27, 2007 Caged and corked green bottle from New Albany, 2005 vintage drunk here as July dies into August 2007. Sweet apply aroma mixed with a very tart sourness and musty wood. Extremely effervescent pour leaves no head, only a golden body. Crisp medium-light body. A touch of strange barnyardy sourness, wood-tinged flavor with somewhat restrained appleness. Medium-strong vanilla with a touch of sugar, but not acidic or tart. Not really super dry, but nowhere near cloying. Aftertaste sees the apples return. Tasting is so dominated by and hidden behind the soft fizziness; it’s not harsh, like many Champagnes, but still has to be reckoned with. Just a pleasant, all-around classy drink, free of the often negative connotations of cider.
