Variety of apples: 80% of bitter-sweet apples (Mettais, Binet Rouge and Frequin) and 20% of acid apples (Judaines and Petit Jaune) Pressing density: 1065 Fermentation takes place in Inox tank. Wild yeasts are used and fermentation is controlled mainly by settlement extraction. After the traditional fermentation in a barrel, it is the bottle itself that, thanks to a secondary fermentation, the “prise de mousse” takes place. This natural phenomenon requires careful and patient attention to each bottle. During the aging period “sur lattes”, the bottles are rotated daily, manually, gradually from the horizontal to the vertical position, in order that the sediment will accumulate in the neck of the bottle, to await removal. At the time of “degorgement”, the neck of the bottle is frozen and, enclosed in ice, the sediment is then removed.

750mL Bottle. Thanks for sharing, Amy! 2006. Wow, wow, wow. This is some stunning stuff. The champagne presentation gives this a special feel. The aroma crackles with fresh apples and reduced apple syrup, prickled with wild fruit touches. The flavor and body come in movements, which I always think is a hallmark of a really well crafted beverage. It starts out sweet and bright, bringing the fresh apples out, but then takes on a sudden tartness that really grabs the tongue, finishing with a clean bitter bite to sweep the tongue clean. Apple flavors roam around in earth, plum, brandy, chalk, and raspberry stem. All around fantastic.

750mL bottle purchased at The Davis Beer Shoppe. Aroma has a fairly significant mineral character present. Light apple character is present along with a bit of a dusty champagne-like yeast nose. Quite dry. Pale, transparent yellow body with a large, fizzy white head present. Quickly dissipates. Starts quite carbonated and spritzy. Becomes a bit metallic and full of minerals (sulfur) in the middle. Has a very dry, somewhat astringent flavoring towards the end. Apple flavor is very minimal. Just lots of basement and cobwebs in this.

750ml bottle, 2009. Yellow golden colour, short-lived white bubbly head and aroma of juicy apple with light oak & funk. Taste is sweetish, fruity apple, green apple, grapes, tart & dry, with notes of wood, oak, barnyard and light tannins. Crisp mouthfeel, light to medium bodied, spritzy carbonation, drying tangy lightly tannic finish. Very drinkable.

Light lemon in colour quite heavily sparkling in the glass, Pours like champagne - big fizz disappearing instantly. A little sweet with honey on the nose. Quite rich, honey and a nice fizz in the mouth. A touch sharp on the finish and overall quite dry.

Bottle from the cidery. Pours clear straw colour with champagne like fizz. Sour apple aroma. The taste is quite sweet with sour apple and a touch of aniseed. High levels of carbonation giving a full mouthfeel. Very pleasant.

Aroma quite restrained, just a slight appley hint, but more a woody wineyness. Pale and effervescent. Crisp on the tongue. Initially quite sharp, but as it warms a bit, some sweetness comes through. Nice lip-smacking sourness. Good crisp cidre to have with grilled meat. A champagne of ciders.

Bottled. Golden colour with no head. Aroma is apples (green and ripe ones), and mild sweetness. Flavour is earthy, mild sweetish sour apples as well as some yeasty and farmyardy funk to it. Somewhat dry palate.

Pours a clear golden color with a decent white head. Aroma is sour, green apple, fuji sweet apple, vinegar. Taste is clean apple juice, slight vinegar bite, weak cinnamon, sweet yet dry at the finish. Palate and drinkability are amazingly smooth. Definitely worth a try.

Champagne bottle at YNWA Beershop. No head. Hazy light green body. Wineous bittersweet aroma and flavor with a high carbonation and a nice acidity. Long dry finish.

750ml bottle from TheCheeseMan, thanks Dan. Clear pale yellow in colour with no head but lots of visible carbonation. The aroma is fantastic, wood, vanilla, apples, brown sugar with just a hint of alcohol. The flavour follows what the aroma brought, its like an iced cider without all the alcohol and not still. Finishes quite long and bubbly. The best regular cider that I have had, nearing ice cider in terms of flavour and aroma. Fantastic stuff right from the start.
