As a true ice cidre "Cidre de Givre" expresses with intensity the flavors of the apples from Domaine Etienne Dupont. It is derived from E. Dupont Cidre Bouche Brut 2005 by freezing it and then removing the frozen water.

2006 Bottle, compliments of Matt, shared with some heads. Pours a clearish copper color with zero head and lacing. Aromas of apple skins, toffee, apple pie. Taste is sweet apple pie crust, with honey, cinnamon, and raisins also present. Mouthfeel was soft and chewy. Medium to fuller bodied cider. This one blew us away.

Bottle, 2009 vintage. An amber colored cider, flat and oily. Soft and rounded on the nose, with some alcohol hints. Lots of apples though. A touch of caramel too. A tasteful one, with lots of apples and sweetness, and some orchard. Dry on the palate even though it’s quite sweet. Really lasting finish with apples and sweetness. Maybe a bit too sweetish and low on alcohol, but it’s still a damn tasteful drink. 120623

The aroma is very sweet, overripe apples, concentrated brown sugar, caramel. The appearance is a deep brown, flat, no head. The flavor is again sweet, apples, overly ripe apple peels in particular, brown sugar, caramel. The finish is the same. Medium to medium thick in body. Not bad at all. Syrupy. Not as interesting as I thought it would be.

Thanks to adneilsen for sharing - aroma of overripe, lightly oxidized apple flesh, caramel/butter/toffee, cinnamon - sweet, whole apple flavor - skin, core - sweet apple pie filling, nutmeg, cinnamon - lightly acidic finish - lingering caramel and overripe apple - a pretty nice, sweet cider.

Bottle @ Brandon’s house. A hazy, copper orange appearance with little to no head. Toasty, caramel, light apple, a touch vinous aroma. Somewhat syrupy, buttery, caramel apple, light toffee flavor. Interesting to try.
