As a true ice cidre "Cidre de Givre" expresses with intensity the flavors of the apples from Domaine Etienne Dupont. It is derived from E. Dupont Cidre Bouche Brut 2005 by freezing it and then removing the frozen water.

Thanks to adneilsen for sharing - aroma of overripe, lightly oxidized apple flesh, caramel/butter/toffee, cinnamon - sweet, whole apple flavor - skin, core - sweet apple pie filling, nutmeg, cinnamon - lightly acidic finish - lingering caramel and overripe apple - a pretty nice, sweet cider.

Bottle @ Brandon’s house. A hazy, copper orange appearance with little to no head. Toasty, caramel, light apple, a touch vinous aroma. Somewhat syrupy, buttery, caramel apple, light toffee flavor. Interesting to try.

Pour is clear reddish with no head, and no carbonation. Aroma brings notes of green apple, caramel, toffee, some sweet sugary notes. Taste is a mix of caramel apple notes, hints of tart apples as well, hints of sweet caramel, finishes with a hint of some slight spice. Fairly nice, sweet for sure.

2006. Bottle. Gift from Sarah. Thank you! I feel bad that this one struggled. The wax was crumbly and when I went to twist off the cork, it snapped of at the neck. The remaining cork was dusty and bone dry and had a weird residue on the bottom. Aromas immediately revealed significant oxidation. The flavors less so, but still a bit mangled. This does have some incredibly fresh sweet cider flavors. The alcohols and by-products are a bit feral and earthy, but the base cider flavor is fantastic.

Bottle at cider tasting. Murky brown pour with no head, n/a apple cider looking. Maple, apple and floral aroma tones. Apple flavor with with a touch of maple after taste.

Very hazy pour with a burnished bronze colour. The nose is soft and chewy. A bit of sweet dried fruit. Peach and pears in addition to the requisite baked apple. There is also a complex sort of maple-like aroma. Sweet and a little bit of soft leathery character. Rich and chewy. It’s pretty tasty.

Bottle. This is my first iced cider. Really tasty. Tastes of tasty apple dessert. Aroma, plesant apple perfume. Golden sunshine color. Really good.

Thanks to gunhaver for sharing this one at the So Long Sea Bass Tasting. Vintage 2005? Pours a still dark yellow-brown. Nose is tart apples, some earthy spice, and concentrated sweetness. Flavor is similar- a sweet, concentrated apple cider that has a hint of spice with the deep, sweet apple flavor. Thick mouthfeel and enjoyable.

Bottle @ Seabass going away party, Jan15th ’11 courtesy of gunhaver De couleur léger brunâtre pas de mousse juste quelques bulles qui percent la surface. Arôme est fort en pomme et le tout reste superbement sucrée, on ne ressent pas trop de cette aigreur acidifiée de certaines pommes. Au palais la pomme est complexe, sucrée (brun) épaisse, impression de jus concentré avec beaucoup de sucre de pomme allant limite vers le caramélisé. Reste un poil en dessous des cidres canadiens.
