As a true ice cidre "Cidre de Givre" expresses with intensity the flavors of the apples from Domaine Etienne Dupont. It is derived from E. Dupont Cidre Bouche Brut 2005 by freezing it and then removing the frozen water.

Thanks to gunhaver for sharing this one at the So Long Sea Bass Tasting. Vintage 2005? Pours a still dark yellow-brown. Nose is tart apples, some earthy spice, and concentrated sweetness. Flavor is similar- a sweet, concentrated apple cider that has a hint of spice with the deep, sweet apple flavor. Thick mouthfeel and enjoyable.

Bottle @ Seabass going away party, Jan15th ’11 courtesy of gunhaver De couleur léger brunâtre pas de mousse juste quelques bulles qui percent la surface. Arôme est fort en pomme et le tout reste superbement sucrée, on ne ressent pas trop de cette aigreur acidifiée de certaines pommes. Au palais la pomme est complexe, sucrée (brun) épaisse, impression de jus concentré avec beaucoup de sucre de pomme allant limite vers le caramélisé. Reste un poil en dessous des cidres canadiens.

Dark brown-orange, still. Aroma is caramel, seedy apples. Taste is honey, caramlized sugar, apple pie, cinnamon almost.

2002 vintage. Pours a muddy hazy honey orange with ok legs. Aroma is sweet mple syrup, oxidation, some sherry, light apple cider, baked apple pie, spices, sweet brown sugar, and slight salty oxidation as well. Flavor is green apple, muddy, dirt, earth, apple pie, apple juice, sweet honey mead, acetaldehyde notes, leather earth and alcohol in the end. A bit messy, old and oxidized at this point.

UPDATED: OCT 28, 2010 2006. Very murky brown, unfiltered pour. Tarry, oxidized apples, almost spicy, peppers. Light body, sugar, maple syrup. Brown sugar. Yeast cakes at the bottom of the glass.

9/6/10. Rating 2100! My first ice cider! 375mL bottle. Cloudy brown pour, reminds of actual apple cider. Huge apple character in the aroma, with big sweet whiffs as well as caramel (think caramel apples) and plenty of spices. There is also a buttery something and a hint of bitter and alcohol as well. Big sweet appley flavor with caramel and hints of burnt - reminds again of caramel apples or pie. Big apple flavor but followed by a hint of something salty or acidic. Not bad, definitely want to try more!

2007 vintage, thanks zvikar, clear deep brown to red and almost no carbonation, dominant aroma of apple puree with dried fruits and a hint of calvados, flavours of apple juice, spice and apple peal, quite sweet with not nearly enough sourness to balance but to avoid being cloyingly sweet, quite simple and not in the same class as the canadien versions i tried.

7.5% abv, 2007 vintage, pours bronze to dark orange with no head, lively aroma of apples, apples puree and notes of barnyard, clear apple juice, apple puree, sour apples skin, some dryness and acidity. Medium Body.

Appearance: Set down before me an opaque, still, dark amber body. Let’s dive right in. Smell: A dense, delightfully sweet-scented aroma of baked apples, spices, and dark caramel sauce. Would make for a great scented candle. Taste: Holds a rich, striking taste of apple butter, it’s strongly sweet (but not unacceptably so), and presents some complex, complimentary spicy tastes of allspice, cloves, and ground cinnamon. Small hint of acidity. Sweet, silken finish of considerable length. Mouthfeel: Medium-full body. Low carbonation. Near-chewy mouthfeel. Drinkability: As the Bible says, it’s better to Givre than to receive-re. An impressive, inviting beverage, that’d likely pair well with a wide variety of desserts. Like a hearty liqueur or port wine, it’s best kept in somewhat small-sized portions. Too much of a good thing and all.

375 ml bottle shared by shawnm213- thanks again, Shawn! Pours a muddy orange-brown color with a tiny head. Aroma of ripe apples, brown sugar, caramel, wood, and a tiny dash of cinnamon. Sweet flavor of ripened apples, tons of brown sugar, caramel, syrup, and wood. Good lord this is sweet. Medium bodied, with minimal carbonation and a syrupy mouthfeel. Gets even sweeter as it warms. Doesn’t quite stand up to the La Face Cachee ice ciders, but damn good and another awesome example of this style.
