750mL thanks to Travlr. Very light near clear pour with lighter carbonation. Quick foam. Nose is vanilla, cinnamon, fresher apples. Taste is straightforward but slightly plastic. Big citric acidity. Long acid finish. No richness.

Bottle. Very pale yellow with a few bubbles. Aroma of dry and dusty red delicious apples. Taste is dry and fruity. Nice.

Chalice. Clear, very pale yellow body. Quick hitting spritz of head.
Initial peary aroma. Lemon/lime, sparkling wine, talcum powder.
Taste is like zesty prosseco or Spanish cava. Not much tartness. Somewhat herbal & mildly tannic. Lots of acid & plastic, with a yeasty finish.
Touch of body. Very stiff, sizzling/irritating carbonation. Big, upfront "walking into a mist of Lysol" burn, followed by a cheap white brandy heat going down. Difficult to enjoy.
This lacked a lot of what I love in Northern Spy apples. This was just way too hot & empty. :(

750mL Bottle, poured at CiderDays 2011 - Cheese and Cider Tasting. Big coconut and pineapple Northern Spy aroma. Tropical. Super bubbly and effusive. Dry. Champagne-like. Fresh, clean, lively and beautiful. Really appreciating the carbonation in this example and Spies give this a great flavor profile. Wonderful.

Whew. A 10% cider. Pours clear yellow. Pretty crisp and dry, biting apple tones. Carbonation is quick to hit the mouth and bite. Decent drinker. Interestingly enough, the alcohol tones don’t really show all that much. Though it does leave a warming thing in the chest and stomach. An interesting cider, but it seems to grow harsh as it warms. If you want to purchase this one, you can find it in the farmers market at Union Square in the spring and summer months.
