2.1 AROMA 5/10 APPEARANCE 4/5 TASTE 6/10 PALATE 3/5 OVERALL 3/20
An okay wheat. The chamomile is muted. Pours golden with a white fluffy head. The lingering stale cardboard aftertaste is a bummer. Tried with Matt and Guy at Fat Dans in Indy in 2016.

2oz taster on tap, at HopCat Broad Ripple. Mostly clear golden orange color. Thin off-white head, with good retention. Leaves good, thicker lace. Bready wheat, orange peel, mild spice, and big flower petal chamomile aroma. Moderate sweet taste, lightly spicy, light bit of tartness. Light to medium body, kind of a full feel. Lightly dry finish. Not a bad flower beer, but still a flower beer.

I thought this beer was great. Very clean, crisp, refreshing. They did an excellent job with the chamomile. It really adds another angle to the beer and fits right in. I am a huge fan of this beer and look forward to trying more from the brewer.

3.5 AROMA 8/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 14/20
Sample at Twenty Tap. Slightly murky golden color with a medium white head that recedes steadily. Short strings of lacing on the glass. Floral aroma with notes of wheat and malt. Light to medium body with flavors of herbal wheat, fruit and malt. The finish is very floral from the chamomile, leaving a spiced fruity aftertaste. Decent overall.

3.4 AROMA 5/10 APPEARANCE 3/5 TASTE 8/10 PALATE 5/5 OVERALL 13/20
Interesting. I had no idea what this was when I drank it at Rodini’s in Michigan City since the waitress said it was only called "Gypsy". I was able to find the Evil Czech tap handle and now it all comes together.
Golden with a sweet and spicy taste. Aroma is also a bit spicy. Great bite in this beer as well, which makes the sweetness work. Unique. I’d drink it again.

3.4 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 3/5 OVERALL 13/20
Draft. Cloudy golden body with a frothy white head. Aroma of raw grain, chamomile, pepper, spice, toasted grain. The flavor is moderately sweet and lightly to moderately bitter. It finishes lightly sweet and moderately bitter. Medium body, velvety texture, lively carbonation. Spicy and floral with a lingering bitterness. At the same time, the strong chamomile flavor leaves an astringent plastic taste in the finish. And because of the strength of the floral notes, the other flavors are muddled.

On tap at the brewpub
An average wheat beer is a bit different than your average sessionable draft. For one thing it is a little on the heavy side. For another the addition of chamomile adds an extra layer of depth. Combined the result is worth ordering at least a five ounce pour.
Aroma / Appearance - The golden cloudy body is accented by a stark white head. Yeast, lemons, wheat, and fresh spruce are helped by a sprinkle of fresh chamomile leaves.
Flavor / Palate - The impression of weedy salad greens throws off the typical flavor profile of a wheat beer. Tea leaves and dandelions soothe the throat before fading with a mild bitterness. This was listed at 5% on the board; perhaps the ABV has been tweaked in the last few months.
