First came a toasted smug called Yin followed by a hoppy fella called Yang. Let me introduce you to Auld Yin – a wrinkly more experienced take on youngster Yin. 9 months in the company of an insightful, complex whiskey cask made a pretty interesting spin on this imperial tajii taste adventure. Aye!

Aroma is chocolate, salted peanut brittle, whiskey, some barrel. Black with light brown head. Nicely pulled together with a slight kick, but is in no way too hot. Chocolate, whiskey, dark fruits, beer. Very drinkable.

A - Dark black with a finger of frothy chocolate colored head. Fades medium-quick. S - Oak, vanilla, whiskey, chocolate, roasted coffee, dark fruits, black licorice, molasses, earthy hops, some booze. T - Chocolate, roasted coffee, dark fruits, vanilla, oak, whiskey, black licorice, earthy and pine hops, molasses, and some booze. M - Full bodied moderate carbonation. Smooth and syrupy with a sweet and warming finish. D - Nicely balanced. Barrel aging adds some nice depth and complexity to the base beer.

Bottle at 12%, bought at Toft Vin Islands Brygge july 2012, enjoyed september 15th same year. All black body, good light brown head - very big head for the strength actually. massive aroma of roasted malt, whisky, leather, blackcurrant and alcohol. Taste is pretty roasty, with wood, ash, english hops, chocolate and whisky. Warm feel, thick body, bittersweet aftertaste with sugar, berries and wood.

Pours black into a snifter. Tan bubbly head recedes to hug rim. Dark pit fruit and espresso aromas. Medium bodied with sweet dark chocolate syrup and mild yeast front to back. Hot lasting espresso finish.

In bottle at Craig’s. Pours a very dark brown colour with a thin, light tan head. Aroma of whisky, oak, chocolate, soy sauce, coconut and alcohol. Similar flavours with lingering coconut, chocolate and alcohol again. Mild carbonation and an oily mouth-feel.

Bottle to snifter. Almost still black pour with intermittent bubbles floating to the top in small groups. Light brown head faded quickly releasing an almost intoxicating aroma of whiskey soaked wood and caramel macchiato. The taste is sweet and smoky but extremely well balanced and blended. While not boozy, this drinks like an elegant after dinner liqueur. I am loving the burnt caramel sugar character to this very robust and oily stout. Extremely well done.

(From notes 14 Oct, 2012) Bottle, 2012 vintage (12.0% ABV). Head is brown and thick, settles quite quickly. The beer itself is an inviting pitch black. Aroma is malt, coffee and a bit of wine. Flavor is overall very sweet; a bit of sweet soy sauce, close to that of BrewDog’s Tokyo, with some added bitterness. Calm carbonation, resulting in a pretty smooth mouthfeel. Finish is bitter & sweet.

Overall, a great imperial stout. Nothing to complain about, really. The pervasive sweetness sets this apart from others.

(bottle, rating #2000) pours a pitch black colour with a creamy brown head. aroma of green apples, vanilla, chocolate icing and ashy toasted malts, chocolate fudge, light alcohol and a hint of bubble gum. flavour is mostly the same, heavy dark chocolate, ash and roasted malts, slightly savoury, with notes of toffee, bread dough, vanilla, a subtle sweetness and a light roasted-bitter finish, alcohol is well-hidden. relatively light-bodied with soft carbonation.
