To take up the challenge and make a 100% true Brett IPA with Yuzu fruit can very easily become a fatal attraction for the brewmaster. Once you get acquainted with the Yuzu fruits irresistible and seductive personality, along with Bretts overpowering, alluring and very charming nature, it will ensnare you and drive you mad obsessing over how exactly you can create the perfect desirable tangy, funky, crisp, tart flavor in ya mouth.

5 of 6 in an Evil Twin Femme Fatale tasting event with Eric of Windsor Hy-Vee. Pours lemony yellow. Flavor is piney and soapy. I’m intimately familiar with yuzu fruit, and the flavor is definitely there, but faint.

12 oz pour into Spiegelau IPA glass. Pours gold, hazy, moderate fluffy head. Nose is fruity, a bit sour, grape-ish. Moderate body, dry. Taste is much milder than the nose would suggest. Much less funk than I would have expected from the yeast. A little malty, a little earthiness, faint sweetness, not much fruitiness except in the finish. Nose is a bit strongly sweet for me, but the taste is really nicely balanced

The little know Yuzu fruit has a charming, slightly sweet tropical fruit taste profile, which is the clear highlight of this drinkable sour. A touch of sourness, funky Brett yeast and a hint of hops add to the pleasant refreshing taste. Yogurt, ice cream and honey underpin a great summer beer.

Draft @ Himmeriget. Not my first time and not the last, an absolutely amazing beer, up there with Invasion IPA and Comet Rider as the very best Brett IPAs, a favorite style of mine. Nice thick and foamy head with heavy Brett, tropical fruit and yeasty aroma. Flavor follows the aroma, with the hops and Brett in perfect balance, with Yuzu adding a bit at the end and aftertaste. The best in the Femme Fatale series (although all are very good). Skål!
