To take up the challenge and make a 100% true Brett IPA with Yuzu fruit can very easily become a fatal attraction for the brewmaster. Once you get acquainted with the Yuzu fruits irresistible and seductive personality, along with Bretts overpowering, alluring and very charming nature, it will ensnare you and drive you mad obsessing over how exactly you can create the perfect desirable tangy, funky, crisp, tart flavor in ya mouth.

Cloudy gold to amber pour with a 4 finger fluffy off white head. Aroma is loaded with fruity citrus, salted melon and some earthy funk. Flavor is like Belgian IPA meets citrus punch, light cereal, nice, mellow funkiness, a little salinity, tons of grapefruit and sweet tangerine-like sweet orange, finishing with light earthy, soggy wood funk and lingering sweet citrus. Light to medium body with a creamy entry leading to a juicy, but still creamy finish, light, blanketing and slightly sharp carbonation and a lingering mouthfeel somewhere between crisp and slightly chalky, dry. I really enjoyed this one, the best usage of citrus in a beer that I can remember, I really gotta try out one of these yuzu fruits. Unfortunately at $14/bomber, although I really enjoyed this one, I don’t think that I will be likely to purchase again.

Bomber. Brett clearly evident in the nose. Huge billowy white head. Hazy gold body with effervescent bubbles. Effervescence comes through in the mouthfeel. Wonderfully unique; part hoppy, part fruity, part bretty. Really nice.

My Bottom Line:
Citrus fruit and delicately toasted cereals are lifted by the fluffiest of mouthfeels, a profile leading to building resinous hop bitterness.

Further Personal Perceptions:
-A sheet of foam covers the glowing pale gold.
-The mouthfeel on this one is gorgeous.
-Yuzu is well integrated and does not jump out at you like a lot of fruit do in fruit beers.
-Chosen hops are aromatically harmonious with the yuzu, until the bitter finish that is.

Nose opening earthy hop aromas. Hazy copper with light layer of head. A bitter hop that is joined then cleaned by the yuzu smooth and amazing great hot weather beer.

Bottle. Pours a cloudy orange gold with visible sediment and a white head that dissipates slowly to the edges and laces. Aroma has notes of sweet grains with some sweet citrus and a bit of light flora underlying. Flavor has sweet fruits and sweet citrus and a bit of grain as well as a touch of tartness.

The look is a nice white head, cloudy look, and is deeper golden in color. The smell really pops, hops, fruity, pineapple, orange, and nice. The taste is bitterness, fruits, hops, floral, and passion fruits
