One of the beauties of beer and brewing is that the best beer in the world and the worst beer in the world are made from (pretty much) the same ingredients. It’s all about having passion and focus on details -- this easy drinkable all brett fermented beer is brewed with my favorite hop variety, Simcoe. So simple, yet so complex. Enjoy!

Yeasty floral aroma with some underlying funk. Flavor is a Roch tart and funky, ever so slightly hoppy with a nice dry finish.

22 oz bottle on sale at Supermarket Liquors, shared and poured into a pint glass. Aroma of light passion fruit, spruce, earth, citrus hops, lemon zest and light Brett. Similar flavor, adding a mild hop bitterness, a light peppery spice and a light musty finish. A little dated perhaps, but pretty good overall.

Bottle, shared by me, in my dining room, just now.
Pours a hazy pale yellow with a huge frothy head and lots of lacing on the glass.

The aroma strikes that right balance between farmyard funk and catty hoppiness that makes you think of a stinky farm cat in the most genuinely cordial way possible. There is also some wet limestone & mild dried citrus rind.

The beer’s flavor is dry and lightly bitter. There is a distinct minerallity to it but at the same time a bit of passionfruit, lemon zest, & pineapple. The beer is intensely earthy.. oh and did I mention dry as a bone?

On all accounts enjoyable & certainly something I would have no trouble drinking on the daily.

22 oz bottle poured into a Spiegelau tulip. Hazy orange with a good three fingers or so of off-white head. Aromas of Brett, tropical and stone fruit, floral, light funk. Tastes of floral and grassy notes, citrus, light Brett and funk. Medium body with a dry finish.

Refrigerated brown bomber poured into a trappist glass. Hazy golden with small/medium white head. Dry aroma, light body, medium/well carbonated, and some big bubble lacing. Taste is earthy hops, yeasty, peppery, some herbal hops, and dry finish. Just not my style, too dry.

From a 22 oz bottle shared at home. Pours a pale gold with a thick white head. Juicy fruit nose. Flavors of orange and pineapple. Moderately bitter finish.

Un liquide souple et moelleux qui ne cache pas longtemps ses zests de citron, ses bretts savonneux et fruités et ses houblons frais. Buvabilité incomparable.
