This beer is made in collaboration with Micah Melton The Aviary and is a modest attempt to imitate The ‘Blueberry’ cocktail as it is served in The Porthole at The Aviary, Chicago. The Porthole is an equally genius and gorgeous infusion vessel designed by Martin Kastner of Crucial Detail design studio. It can be used to create striking cocktails or any other type of infusion - maybe even beer.

Light color and almost no aroma. Shine haze at the end of the bottle. Slight hops and a bit of citrus. Nice even palate. Bottle

Bomber. Disclaimer: no idea who decided this was a Saison, but it has virtually none of the characteristics of one. That being said, whatever you want to classify it as, it’s solid. Berries and buttered toffee in the nose big time fruitiness, light candy sugar, caramel and berries in the mouth. Only detectable Belgiany notes are in the finish, but blueberries mask most of it.

Smells very Belgian, a sweet saison aroma. It is nice, summery. Cloudy, with a darker red appearance than you’d expect. Huge white fluffy head, sticks around for a long time. Spicy with some huge carbonation. Fruity without being overwhelming. This is good but not really great.

Hazy light color with super fizzy mouthfeel and white head. Really light delicate blueberry flavors, delicious.

Hazy gold pour, white head. Neat beer. Some berry, some saison yeast, a hint of something smokey maybe, herbs. Tasty.

Bomber. Read interestingly enough that it was worth a shot. Lots of general sweet malts up front, Belgiany yeasts everywhere, hints of booze singe throughout, with a essence of blueberries you can taste, but not like it was freshly squeezed into the brew or anything. Bits of lemon and citrus as well. Again, interesting, but wouldn’t pay $11 for the bottle again. Sounds like it’s much better on tap from the ratings.

Pours a hazy amber with a rather thick white head. Aroma has firm yeasty and melon notes, quite inviting. Flavor delights with fruity, melon, yeast, and subtle malty notes. Texture is quite firm and has some good fizz. An interesting concoction worthy of at least a taste. Or several. Or a glass.
