Evolution usually underwhelms me but this big beer series was really good, Oaky with a lttle bit of bite and decent alcohol made me happy.

750ml bottle into a Chimay goblet.
A: Pours a very cloudy copper color. I canít see much of the carbonation through the glass. Thereís about a finger worth of off-white colored head, and it features excellent retention and a uniform texture. No lacing is left behind.
S: Wow, thereís quite a bit on the nose thatís interesting. There are the usual gathering of Belgian yeast esters (apples, white grapes, pears), and a slight funk as well, but the oak here has a distinctly buttery note that really adds to both the barrel qualities and the beer itself. Thereís also some vanilla, too, along with peaches, cherries, cream, and even - as crazy as it may sound - chocolate. I told myself not to homer it up before reviewing this...
T: It opens up with a very fresh notes of apple and grape. The barrel flavor hits the middle of the palate, bringing oak, vanilla, and even a touch of butter. Afterwards, thereís a distinct third act where the brett comes out - though it will take a few sips before the funk really hits the taste buds. Its brett character brings a nice fruitiness that book ends the initial apple and grape tones with something more resembling cherries. The finish is quite fruity in particular, and almost tart at times. Occasionally, some tobacco will try to appear in spots near the back end, and is all the more welcome. It brings the complexity without being moronic, sloppy, or overdone in any manner, and that makes it a fantastic beer.
M: In spite of the fizzy carbonation, itís actually quite soft. Itís also not as dry as some Belgian-style ales, rather it has a semi-sweet, long lasting finish. Not so sweet as to loaf around on the palate, thankfully; since the carbonation is long-lasting, it still remains relatively dry and drinkable. Some might be turned off by the carbonation. Donít care, still delicious.
O: First off, itís hard for me to homer on MD beers - sure, what Iíve had from Stillwater has been good, but half of Flying Dogís line up is meh, three quarters of Heavy Seasí line up is meh, and the rest are mere footnotes. Evolution is the glorious exception to that rule: Iíll hype their beers ítil the cows come home, not just to raise their trade value (daddy wants to snag some HT when moneyís less tight), but because their offerings really are that delicious. This being no exception. Itís nicely complex without having to beat the palate down with excessive anything. I could think about killing another 750 of this, itís that damn good.

2012 bottle. Pours copper orange color with aroma of chardonnay, wood, and yeast. Chardonnay flavor with Belgian yeast, and wood. Dry finish. Very nice.

The best of the migration series. Bright, lemony, brett, chardonnay taste. A gusher and overcarbonated.

Whoah, where the heck did this come from?
Ok, here we go.
The appearance was a nice somewhat hazy amber to brown color with a nice one finger white foamy head that must last for at least a good freakiní two minutes before it really dies to a nice coating of head to lacing at the top of the body.
The smell - uh... gee weez where do I start, ok, here goes: light somewhat tart to sweet apple to go to a nice pear intake and leading me onto a super nice resusicating sort of intake of a Belgian sort of spices invading the previously stated fruits.
The taste - once again, wow, ok, there is a decent sour to tart start to the flavoring but once it starts to warm a bit, it balances out and begins to let the fruits and Belgian spices overtake it a bit. The aftertaste, well, its a good one, hmmm.....everything previously stated does end up leading into this however the finish I get is somewhat dry but nothing misleading.
On the palate, there is nothing obscure about this beer as it sits a nice medium on the body but yet still tries to proclaim a decent sessionability about it. Does it? Yeah, in my opinion, it does.
Overall, ok, I get it, oaked in Chardonnay barrels and I still get a decent oakiness to it for the most part, complex - sure is! Would I have this again? Sure will, if I could get it again in my distribution. Until then, cheers to the Ratebeerians!

Red amber color with a medium off white head that left nice lacing on the glass. Aroma of wood, chardonnay, some sweeter malts, toast, and spices. Taste of citrus, wood, spices, vanilla, and tart, acidic white wine in the finish.

2012 bottle from Capones. Pale amber with a beige head that mostly fades. Fresh with a mild brett aroma, chardonnay, oak, yeast, light sweetness, some funk. Moderate body and carbonation, sweeter then its aroma, more chardonnay on the finish, quite tasty.

750 mL bottle shared by/with Maryland friends, poured into a tasting glass. Fall 2012, Bottle 1377/1400. Pours a hazy golden yellow with off-white head. Aromas of Brett, funk, wine, sour fruit. Tasting notes of tart fruit, funk, Brett, yeast esters, stone fruit. Medium body with a crisp dry finish. Light to medium carbonation. Tasty and interesting, though I donít think I could drink the whole bottle on my own in one sitting.

Draft at tjs. Pours hazy amber with a small white head. The aroma has a ton of funk, a woodiness, a fruitiness. The taste has some wildness to it. Funky, dry, plenty of the chardonnay barrel, a bit spicy.
