COMMERCIAL DESCRIPTION
Centesima cotta Extraomnes
Paglierino chiarissimo, brillante e con una schiuma abbondante e screziata.
Profumi che rimandano ai due luppoli nobili usati anche in dry hopping:L’arancia dolce per il Cascade e il floreale bianco con un tocco di vegetale piccante del Saaz.
In bocca è molto asciutta grazie allo stakovismo del lievito Saison.
Ritorna in via retrolfattiva l’apporto dato dai luppoli con un finale di erbe amare che vorrebbe ricordare le Saison bevute nell’Hainaut ai primi del ’900.

The color is very pale straw yellow, bright, with generous head.
The aroma links to the two noble hops used also as dry hopping: sweet orange from the Cascade and white flowers with a touch of tangy herbs from the Saaz.
The mouthfeel is very dry, thanks to the hard work of the Saison yeast.
In the palate the hops appear again, with a final of bitter herbs that reminds of the Saison brewed in Hainaut in the beginning of the 1900’s.

Bouteille 33cl pour le 100ème batch, quoique le mien était le 101ème. BB 31-10-2014, lot# 101-13. Dorée trouble, col épais blanc crémeux. Arôme présente ce bouquet agréable que je retrouve dans nombre de Extraomnes, tirant ici sur cette signature belge typique. Note houblonnée neutre fleuri et moyennement herbacée. Palais est houblonné sur un zeste de citron, pointe herbacée et une once de pamplemousse. Malt de caractère pils-cara avec ce profil saison que j’avais déjà relevé sur leur version Wallonië. Le tout reste très léger, complexe et agréable. Profil grains en fin de bouche.

My Bottom Line:
This fluffy, citrusy Saison lays out cracking straw and growing herbs in a dry and balanced vehicle.

Further Personal Perceptions:
-A sheet of foam tops the misty straw blond.
-The flavour profile is delicate and very quenching.
-The hop bitterness is rather generous.
-The citrusy zestiness works well with the Saison yeast.

On tap @ Elfo’s Pub, Perugia, Italy. Pours with a gold hazy colour, small white head. Aroma is medium malty, softly hoppy, medium yeasty, with notes of barnyard, basement and soft notes of cheese. Taste is dominated by salt; quite right at first touch, but gets a bit too aggressive after a while (I was thirstier after drinking this than before!). Medium body, oily texture, soft carbonation.

Draught in Rome on 11th Dec 2013. Poured a cloudy orange/amber colour with a white head. I thought this a sweet and sour sort of beer, floral and fruity yet with an undertone of sourness that gave it a bitter finish to every sip. Highly carbonated it was a little to ’fizzy’ for my palate but I still enjoyed it.

330 ml bottle from beer-shop.it served into a Teku. Slightly hazy and pale canary yellow, with some green-ish/olive oil tinges and a bright white head. Light notes of citrus fruits, mainly mandarin, floral hops, white grapes and definitely a strong spicey saison yeast presence. Strong herbal bitterness in the mouth with a very pleasent and dry finish. Light to medium body, average carbonation. Clean, crisp, refreshing. Chapeau Schigi!

Bottle. A hazy pale to medium blonde beer, with a large, frothy, lacing, mostly lasting white head. The aroma is lightly malty (toasted grain), moderately hoppy (flowers, herns, grass, grapefruit), lightly to moderately yeasty (cobwebs/dust), with notes of orange, pepper. The flavor is moderately sweet, moderately acidic, moderately bitter. Light to medium body, velvety texture, lively carbonation, very dry and long finish with heavy bitterness. One of the most complex. refined, drinkable and satisfying sessio beers I’ve ever had. Worthy rival of Taras Boulba and all the best hoppy belgian pale ales/saisons.

At a tasting, thanks DSG, stable creamy head, hazy very light orange colour, aroma of herbs, wood and mustard, herbal flavour with a light fruitiness in the back, strong herbal bitterness, but not much more. Not too exciting.

Aroma of zesty, citric, floral and spicy hops, slightly grassy, with some yeast and fruitiness. Yeasty flavor, a bit spicy, with a bit of fruitiness and a nice floral, citric and spicy hops and a pleasant bitterness.
