COMMERCIAL DESCRIPTION
Tonaca di frate con evidenti riflessi rubino e schiuma compatta color nocciola. Un effluvio "vinoso"domina il primo olfatto, con riconoscimenti di susina disidratata, dattero e di spezie dolci e penetranti. Il palato è morbido,"warming",con un finale di prolungata persistenza piccante.

My Bottom Line:
This sweetish Quadrupel outlines dried figs, caramel and wet earth in a plump profile licked by alcohol.

Further Personal Perceptions:
-A ring of foam crowns the hazy purplish brown.
-The yeast persona is surprisingly introverted.
-Mild hop bitterness appears in the finish.
-This is a tad too malty sweet for my liking in the style.

In bottiglia. Colore marrone scuro con riflessi rubino. Poca schiuma e poco persistente. Aroma di frutta secco, leggero cioccolato. Al palato corpo pieno ma non eccessivo, sentoiri di frutta secca, vinoso, cioccolato amaro. Finale ancora con frutta secca in primo piano.

ASPETTO: marrone scuro, torbido. Schiuma giallognola molto chiara, abbastanza fine, abbastanza scarsa e poco resistente. AROMA: è il suo punto debole. Aroma piuttosto debole. Maltato, ma al contempo fresco. GUSTO: chiari sentori liquorosi, di prugna e di frutta secca, nonché anche un tocco di cioccolato. Scivola bene sulla lingua. Corpo tra il medio o lo strutturato. Alla fine della bevuta, perde leggermente di corpo e di intensità di sapori, ma rimane ugualmente molto gustosa. Un’ottima birra italiana, che si fa ricordare.

UPDATED: JUN 27, 2014 Pours a small/medium tanned, but very thick head; colour it’s deep dark brown with a hint of ruby reflex. Complex and very strong aroma: sweet/roasty malts, licorice, dates, spices and dried fruits, wood----> toasted. Tastes roasted malts, licorice, coffe, toffee, dried fruits, initially quite sweet then turining to a more bittery note; very warming and quite boozy. Creamy mouthfeel, full bodied, very soft carbonation. Very long and increasingly bitter (Bitter/sweet) finish, which remembers an Imperial Stout, sort of a tsar style but with added sweet (those coffe/licoricy hints are very well present). Not as balanced as the best, but very original and valid Italian quadrupel

Clear medium to dark red brown color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, light moderate hoppy, moderate yeasty, earthy notes. Flavour is moderate to heavy sweet and bitter with a long duration, sweet malt, sugary, dark dried fruit. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. Wonderful dark/sweet aroma followed by coffee and toasted flavors. Nice warm alcoholic feeling. Truly a great beer.

330 ml bottle from beer-shop.it served in a snifter. Pours a dark brown colour with a small beige head which dissipated quickly, leaving a nice ring of foam. Aroma of brown sugar, dark fruits (raisins, plumbs, figs, dates), caramel malts and toffee, some light spices like star anise and cinnamon, and a bit of booze. It has some vinous qualities, very fruity and slightly earthy. One small sip is more than enough to fall in love. So luscious and velvety smooth, pretty sweet but not cloying at all. Quite different compared to the great trappist quads, especially considering how soft and gentle is the carbonation. Almost full bodied, oily texture. The alchool is extremely well hidden, even at room temperature. Extraomnes keeps getting better and better!

Bottle @ dieci. Schiuma beige fine e persistente. Birra marrone scuro con riflessi rubino. Aroma fruttato, frutta rossa(prugna). Tostatura evidente, con note di cacao amaro, e dattero disidratato. Aroma alcolico tenue. Gusto secco, piuttosto amara per lo stile. Speziatura evidente, di sicuro coriandolo ma non solo. Retrogusto di zucchero di canna grezzo.abbastanza equilibrata (sin troppo amara) ma armonica. Di corpo, ma piuttosto rotonda, nonostante l’impatto astringente.

This beer pours a dark reddish-brown color with a medium foamy tan head that dissipates gradually. Small patches of lacing. Aroma of malt and dark fruit. Medium to full body with flavors of roasted malt, earthy yeast and raisins. The finish is slightly syrupy and fruity with a malt aftertaste. Above average overall.
