75 cl Bottle. Deep gold, effervescent, almost a bit cloudy. Crisp apple nose, light dust, rather dry and light acid, green apples, some tannins. Nice. Ripe apple sweetness is balanced with light acidy, some citrus, some tannins, some light funk. Dry, to sweet and fruity mid, to dry finish. Effervescent like champagne. Excellent stuff.

Bottle. The cap goes off like a glock: BOOM! No gusher though, so the drama was quick. :-) Slightly hazy light orange body, tiny white head. Lively carbonation in the body, regardless (most ciders don’t seem to generate head retention to any considerable degree...). Aroma is apple cores, wood, hints of blue cheese and dew. A bit strange, but good. Taste is mature apples, yellow apple peel, wood and yeast tones. Aftertaste reminds me of walnuts. A bit peculiar perhaps, but quite nice. The palate kinda ruins the ball, though: parching and watery at the same time, which I really don’t like. Suspecting an old bottle here (2007, with a 3 year best-before-date so that could be correct...). Still pretty OK.

0,75L corked (2007 Vintage) champagne bottle. Sounds like a gunshop when opening. Tall fluffy fully diminshing white head. Noisy and vigorous carbonation. Body is clear straw to yellow. Nice smell of apple jam, or ripe red apples with a little sulphur touch. Delicious mouthfeel; Vivid and sparkling, yet soft on the palate. Gently sweet apple flavor. Rounded and genuine, with a refreshing acidity. Properly light-bodied. Soft sparkling ending. Very good, indeed.

Pours bright golden; champagne-like. Very musty apple aroma. Clear, prickly apple flavour. Quality cider.

Bottle, as Normandy Cider. Hazy gold with a white mousse that doesn’t quite disappear because of very high carbonation. Aroma of tart apples, stewed apples, leather. Softer and sweeter in mouth than suggested by the aroma - more stewed apples, light tartness, still sweet finish with only hints of acid. Good stuff.

Clear medium orange color with a large, frothy, fair lacing, fully diminishing, white head. Aroma is moderate apple, tart apple, green and red apple, barnyard notes. Flavor is moderate to heavy sweet and light light acidic with a average to long duration, fresh. Body is medium, texture is oily, carbonation is soft to flat.

Bottled@Pikkulintu, Helsinki. Pale golden colour, small head. Aroma is sweet fruits, some apple as well as mild yeast and some mild spices and toffee. Flavour is apples, some mild spicyness, barnyard as well as some slight sugary sweetness.

750 ml dark green "champagne" bottle, as "Famille E. Dupont Cidre Bouché Effervescent Naturel", vintage 2007. From Vinmonopolet, bestillingsutvalget. ABV is 5%. Bottle conditioned. 80% of the blend comes from the bitter-sweet apple varieties Mettais, Binet Rouge and Frequin, with 20% Judaines and Petit Jaune for acidity. Gushes out of the bottle when the cork is popped, pours very fizzy, moderate carbonation in the glass. Golden colour, white head disappears instantly. Nice aroma of cider apples and sweet eating apples, with a hint of oak. Flavour of moderately oxidised cider apples, medium sweet. Slightly tart finish with hints of oak and sulphites. Easy drinking.

Corked bottle, vintage 2003, 7 years old, 6% ABV
Very likely, the Fermier is the same as the Brut de Normandie, and alcohol varies every year.
Highly carbonated, the cork pops with a loud sound; it pours a clear golden color, with big head but reducing quickly; big bubbles in the glass.
Interesting aroma: besides some apples, there is a good trace of roasted hazelnuts.
The carbonation being all gone in the foam, the mouthfeel is quite soft, and sweet too (I expected a dry cider instead, both for the ABV, the age and the high carbonation); the flavor is very woody, with soft tannins and astringency, and apple skins; light hazelnuts. The final is a bit on the dry side.
A very pleasant and reasonably complex cider, and it’s impressive how it keeps a good shape after 7 years.
