750ml Beautiful copor pour with a white bubbly head that lasts and lasts. Floating bits of yeast. Smells very spicy and fruity. Cinnimon definitely evident. Even though it is the middle of june I am reminded of early fall with browning leaves on the ground and a farm house smelling of cinnimon apple pie. The flavor matches. Absolutely delicious. Spicy, smooth, warming. Perfect.

Very skunky and hoppy! This beer poured a light gold w/ good head and lacing. Big soury fermented fruit, skunkweed, and honey sweetness. Light bodied and minor effervescence. Thanks to Dr. Bill for the surprise!

UPDATED: OCT 22, 2005 2004 or 2005 bottle. Head is initially large, frothy, off-white, mostly lasting. Body is hazy dark amber, bottle conditioned. Aroma is moderately yeasty (barnyard, cobwebs), lightly hoppy (flowers, herbs), moderately malty (toasted grain, cookie) with notes of clove, twigs, grass, country air, lemon zest, hay. Flavor is moderately sweet, lightly bitter, moderately acidic. Finish is lightly sweet, moderately bitter, moderately acidic. Medium body, velvety/watery texture, lively carbonation. If anyone needed any evidence that Dany changes his recipes with virtually every batch, here’s an obvious one. Two or three years ago, a sample I had was golden colored and very tripel-like (see old rating below). Now we have a dark amber brew that’s a bit closer to, say, Pissenlit. This sample was in amazing condition, which makes me think it’s a 2004 batch that’s coming into its prime. Either that, or Dany got it spot-on for the 2005 batch. Absolutely stunning.

2002 bottle? sampled 10/2002. Head is initially huge, frothy, rocky, white, mostly lasting. Body is hazy medium yellow, dense small particles, bottle conditioned. Aroma is moderately yeasty (barnyard, cobwebs), moderately hoppy (lemon, flowers, herbs), with a note of coriander, hints of clove and pineapple. Flavor is moderately sweet, moderately bitter, moderately acidic. Finish is moderately bitter, moderately acidic. Medium body, watery texture, lively carbonation.

NorCal tasting Jan 07 - This is by far my favorite Fantome beer. The nose on this beer is just incredible, with a sour, fruity, earthy, funky nose reminiscint of a flemish sour or a lambic. Appearance is was a hazy brown rust color. Reminded me of the color of fallen leaves. Flavors meshed damned near perfectly. Notes of juicy berries, yeast, herbs, with a dry finish. Very complex overall and very, very satisfying. Get it if you can.

Fall ’99 - enjoyed Summer’04!!! Part of the JoeM500/Jaymobrown Bike & Beer Tour of Chicago, with thanks to Delilahs for keeping it cold!!! Totally Champagne-like, better than Cristal and all that other trendy crap, this Dany P masterpiece was golden, sparkly, medium bodied, and near perfect. Huge chunks of sediment left in the bottle. Lemongrass nose. Bubbly, sweet and malty in the midde, with hints of exotic spices lurking softly beneath. Drier, more champagne like, but with dry grassy hops at the finish. Superb aftertaste. Certainly one of the best beer experiences of the year, as we sat and watched countless Lincoln Park Trixies maneuver their fake breasts through traffic via Range Rovers and Lexus SUVs and greeted the passing by uber-trendy indy rocker types with head nods and "what up?"s.

Had this at Le Bier Circus on 5-13-03 and again on 5-26-03. Ordered from the "Vintage" list. 1994 bottle. Beautiful deep bronze with a light brown head. Knock out aroma! Strong creamy vanilla with a sweet chocolate mix. Taste is awesome! Apple, cinnamon, nutmeg, weaker vanilla and fruitiness. Carbonation in the mouthfeel and on the tongue. The beer became hazier when the sediment was added. Wonderful beer. Will be buying some and aging it myself!

Murky orange color with spearmint and oak in the nose. Lots of foamy sizzling head that forma a cloud on top of the brew. Cooling mint, oak, anise and a little cinnimon wraped in a tart blanket. Not for the faint at heart.

Poured a beautiful dark reddish brown, cloudy with a fluffy eggshell head. Big apple cider aroma mixed with sour fruit. Flavor was yeasty and spicy, with a hint of sourness from the yeast, with a warming alcohol finish. The carbonation leaves a spritzy feeling. What does it take to get Fantome in Oklahoma?!?!?

750 ml bottle. An unclear medium amber beer with a large, creamy, mostly lasting and lacing beige head. The aroma is yeasty and hoppy with an average maltiness. There are notes of spices (pepper above all) , fruits (strawberries, pear, hint of citrus). The flavour is moderately sweet, moderately acidic, lightly bitter. A mild and pleasant toasted note in the end. Medium body, lively carbonation, long finish with medium bitterness. Tasty and complex, very good.

Golden color; giant head, nice perlage. Pleasant aroma of malt and wood; getting fruiter when warmer. Rich body, immediately aggressive with a strong bitterness, turning to be a bit fruiter at the end (apricots; Morello cherries). A lot of old hops in the final.
