[Sampled at the Pre-GABF Babblefest 2004] An unclear dark orange beer with a nice white head. The aroma is sweet spicy with coriander standing out, but also with notes of yeast. The flavor is sweet with notes of alcohol, caramel, and spices.

Bottled. Orange coloured and cloudy. Very complex estery aroma, I get melon and bubblegum. Firm yet fruity, then a new sensation sets in, a hot cayenne pepper finish!?!

Hazy amber coloured with an off white head. Light acidic aroma of fruits and spices. Flavour of fruits and spices.

Bottle from Bier circus, Brussels. Vintage 2001 (20 Euro bottle): Pours dark muddy brown with a creamy off white head. Earthy, spicy, peppery aroma. Both sweet & sour Roasted malts - caramel & chocolate. Smooth & soft with a sour freshness. Giant sediments in the bottom of bottle. Another exciting fantome experience!

muddy beige, spicy, malty, cinnamon; vibrant palate; slight acidity; citric, wheaty, white pepper and earthy hops. Thank God I can’t taste the mustard seeds.

Bottle at London Gathering Nov 2005. Orangey gold colour. Very sour. Some nice apple/lemon. Quite nice sourness, then a bit of funkyness. Quite nice. Will definitely see if I can get to the brewery.

Orange, extreme hazy. Steady orange head. Aroma is fruits, malt, apples, citron, orange and chocolate box. Very dry and sour and unique taste. Mold and wood flavor. Peppery aftertaste. Certainly unique brew and one third of bottle was enough for me (cost only 5 euros!):)

red-amber colour, fine head, no lace, orange aroma, vinous, yeasty, sweet and smooth, full-bodied, spicy with a long dry bitter finish

Bottle at the London Gathering, November 2005. Not bad, but I anticipated more from this brewery. Very murky appearance. More sour than saison - not really much earthy, farmyard character. More acidic, tart fruit. Distinctly yeasty with some spicy notes. Quite soft and not as imposing as expected. Not my favourite Fantome on this showing.

Pours a slightly hazy copper orange with a fluffy bone-colored lacey head. Wonderful floral, Belgian malty, estery, yeasty, and semi-tart aroma. Body is full and sweet, with some musty yeast character, caramel, and sour cherries. Good crisp, clean warming finish. An excellent saison, thanks BierBauch!
