3.5 AROMA 6/10 APPEARANCE 3/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
Sample @ Stockholm Beer and Whiskey Festival 2013. Hazy amber liquid with small white head. Aroma of bread, white pepper, black pepper, earth, barnyard, spices and grain. Taste is dry, light bitter and light sour with notes of spices, black pepper, white pepper, bread and barnyard. Light to medium bodied with medium carbonation. Not Fantôme’s best beer but still nice (if weird).

75cl bottle. Heavily hazy brown/orange with medium head. Nose : strong spicy notes. Dominating pepper, mountain honey, orange, pumpkin, some little booze, tart, wood. Sip : low carbonation, medium body. Sweet and spicy, earthy. Orange and pumpkin like fruitiness. Cooked fruits. The aftertaste is strong pepper and spices. Overall the beer is rich but drinkable. Well balanced sweet/bitterness. Nice one.

3.2 AROMA 7/10 APPEARANCE 4/5 TASTE 6/10 PALATE 3/5 OVERALL 12/20
A amber colored beer, with a very nice white head. In the nose is yeast, sour, citrus, grains. It is a medium bodied beer, with a good carbonation. In the taste there is a lot of sour and light bitterness. It is a bit sweet, but becomes sweeter, the sour stays. The aftertaste is mostly sour with milk chocolate sweetness. Overal it is a strange sour white sweet white beer, but i cannot say that i like it very much.

Oh yeah a new Fantôme. 75 cl. bottle @ home. Procured from Willems. No date & the bottle shows that this was clearly made for USA market like pretty much all of his beers. .Pours extremely murky opaque fox orange / brown amber with a quickly disappearing tanned head. Bottom of the bottle is among the murkiest beers I have ever seen, ridiculous. Smells of plaster, overdone BE yeast, slight infections / issues, overripe dark fruits, spices, wild herbs, something faintly moulding,… Tastes of thick BE plaster yeast, candy sugar, malts, minor infections, overdone dark fruits, touch prunes, sweetish, not getting any black pepper which is quite unfortunate. Something bitter mixed with plaster in the back. Slightly sticky, touch over average carb. Sadly neither terrible or phenomenal as hopped from Fantôme nor even weird, this is like 100s of other not entirely okay BE brews. Whilst better than most beer within that category, this is not really what I was hoping for but than again Fantôme never gives you what you are looking for. This just proves that once again. I am probably way over-rating this one.

Brown with a white head. The aroma and flavor have a lot of toffee and cherry notes. I also get some raspberry character in the flavor. Medium mouthfeel and medium carbonation. Nice Belgian ale.

12/22/2010: Fantome Dark White... Aroma: Dusty; moist
socks; dried citrus peel; faint unknown spice. Appearance: Opaque,
dull dark amber; big, foamy beige head. Flavor: DRY, hints of dry
roasted grains; slightly musty; tinge of citrus; weak spices; dry
finish. Palate: Medium body; bubbly, foamy mouthfeel. Overall:
Uninspiring; easy forgettable.

4.1 AROMA 8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 3/5 OVERALL 17/20
Cloudy caramel with big, flotsam, beige head, good lacing / Funky, musty, herbaceous nose of orchard fruit, caramel, soap / Light body, smoky, acidic, nice balance tending towards dry with some astringency, lightly bitter finish / Delicate flavors of turning apple, pear, caramel, smoke, charcoal, cheese rind, chrysanthemum, black pepper / The "fruit" is a little weak on this, but I quibble. It is still another great Fantome beer.
