Aroma is yeast, light lemon, and some earthiness. Taste is much the same with the yeast being a bit overbearing causing this Saison, IMHO, to be a bit lopside. Pours a golden amber color with a huge cloudy head that leaves plenty of lacing and fades thin. Aroma is bitter and sour - lemon, grass, earth. Taste is about the same with a bit of citrus there but not very bright. I like my Saisons to be fruity or funky, and this is just in that odd earthy class. It’s not bad, but nothing extraordinary. I love Fantome saisons and when I get one like this that tastes flat I must assume it’s just old. Aroma was great. Grass, lemon and yeast. Very strong. Pour was a flat dark gold with no head or bubbles. Taste was big. Lemon, grass (lemongrass?) fills the whole mouth. No carbonation to help the yeasty bite. Overall this is a good saison, but in the summer heat (when I love this style even more) it needs carbonation to dry out the cheeks and make it more refreshing. Fine carb, soft and refreshing with a touch of resin. Capped and corked, opens with a pop. My cork has 086/477044 printed on it, not sure how to interpret that (ed. IT’S THE BREWERY PHONE NUMBER, I’m an idiot). Pour is hazed golden with a nice 2 inch snow white head. As it falls, leaves behind pretty lacing on the glass. Tiny carbonation bubbles are visible, along with some sediment. Aroma is the "Fantôme" yeast, earthy mineral, sour citrus and wheat. Taste is really soft and approachable at first with wheat, then transitions into a slightly bitter earthy / mineral taste which works really well. Nice long finish picks up more of the "orange peel" sour bitterness, finishing nicely. As it began to warm a bit, I picked up on some black pepper spiciness. The palate is thirst quenching, yet serious. All kinds of complexities in this one. This is a really nice beer, my favorite Fantôme to date. Aroma is musky citrus, spiced skunk. Flavor is chalky, yeasty lemons. Earthy and tart but not nearly as intimidating as the aroma. I’m not so sure that it "broke my balls", but I’d try it again.
