Commercial Description:
With joy and a little bit of mischief, Fantôme brewer Dany Prignon dedicates this very bitter beer to all of the many varieties of brise-bonbons - literally, ball-breakers - in the world. Specifically, this beer is meant for wise-guys, braggarts, pains-in-the-ass, muck-rakers, troublemakers, know-it-alls, stuffed-shirts, blow-hards and bores, as well as nut-cracking, wind-bag, prattling-on, self-appointed experts on everything, and nose-in-the-air snobs, convinced they can do anything better than you. Dany intended to make a beer too bitter for a normal person to enjoy. The problem is, everyone loves it! Guess we're all just a bunch of brise-bonbons sometimes...

Hazy, light amber body with a large fluffy white head. The nose is floral with dough, spicy hops, and caramel. The flavor is lightly sweet with cookie dough, light caramel, grapes, apple, grass and light citrus. Medium body is very soft with moderate, gentle carbonation.

From bottle, no 22 at Papsoes blindtasting. Pours hazy and somewhat pale yellow with a fully diminished white head. Citric and brett aroma. Mild citric towards mild brett flavoured. Has a mild sweetness which together with a mild spice note lingers into the finish. Quite nice and smooth. Slight woody in the far finish.

Bottled. A hazy golden beer with a thin white head. The aroma is sweet citrusy and yeasty as well as with light notes of brettanomyce. The flavor is sweet acidic with notes of citrus, yeast, and brettanomyces. Thanks Papsoe for sharing.

#22 [Blind tasting session @ Papsoe 30-11-2007] Average fizzy white head that mostly diminished. Cloudy yellow color with particles in flow. Fair display of lacework. Sour notes of citrus and fruit. Horse blanket, soap. Over the palate not quit as sour as expected with notes of caramel, grain, wheat. Medium bodied with an average carbonation and light dry texture. Light to moderated sweet and bitter flavor. Light sour finish.
