"With joy and a little bit of mischief, Fantôme brewer Dany Prignon dedicates this very bitter beer to all of the many varieties of brise-bonbons - literally, ball-breakers - in the world. Specifically, this beer is meant for wise-guys, braggarts, pains-in-the-ass, muck-rakers, troublemakers, know-it-alls, stuffed-shirts, blow-hards and bores, as well as nut-cracking, wind-bag, prattling-on, self-appointed experts on everything, and nose-in-the-air snobs, convinced they can do anything better than you. Dany intended to make a beer too bitter for a normal person to enjoy. The problem is, everyone loves it! Guess we’re all just a bunch of brise-bonbons sometimes..." - Shelton Brothers

This is my favorite offering from this brewery. I prefer the heavily hopped, well-attenuated interpretation of saison over the spice teas that are usually done by this brewery. This one has a nice aromatic and palate dryness that makes it dangerously drinkable at 8% ABV. Before I knew it, I was at the end of the bottle and craving some more.

Bottle from Etre Gourmet, bought in 2012. Slightly hazy golden with a large white head. On the sweet side with yeast, fruit, some candy, light spices and orange. Not that bitter and with a lively carbonation. A descent beer.

750 ml bottle at home from notes. Pours a hazy golden with a hint of orange color and a medium plus sized white head. The aroma and flavor have herbal and grassy hops, floral, hint of citrus, the typical Fantome funk from their house yeast and whatever else they dug up off the property, dusty, dry, decent bitterness for a saison, solid.

Bottle at home. Pours a pale orange golden with a white head. Fruity, floral aroma, citrus, yeast, spices. Taste is light sweet malts, fruity, citrus, lemon peel, spicy, yeast, bit earthy, dry finish, long bitter aftertaste. Strange.

Bottle @ Christers. Pours dark yellow with a white head, loads of lively bubbles. Aroma light malt, yeast, spice, grass, ginger, little honey. Flavor is malt, yeast, spice, pepper, honey, little ginger, grass. Medium body, lively carbonation, light spicy finish with some alcohol. 170215

Bottle @ Aarhus tasting. Hazy golden with a lasting white head. Aroma is sweet, malty and moderate hoppy - flowers. Flavor is quite sweet and rather bitter. Sweet and rather bitter finish with warming alcohol. Oily. 170215

Bottle at Delirium Café. Pours cloudy gold with a medium, frothy white head, medium retention with light lacing. Aroma is biscuit and honey malt, barnyard yeast notes, candi sugar, ginger and black pepper. Flavor is sweet malt and candi sugar, pear esters, alcohol notes, earthy hops, light bitterness and a dry finish. Medium body and moderate carbonation.

Poured from a 750ml bottle. Sweet pilsner malt, caramel, an herbal bitterness in the finish. This is not as bitter as the label would make you believe. Meh.
